Abstract
Penelitian ini dilakukan untuk mempelajari pengaruh jenis dan konsentrasi starter pada kualitas curd . Jenis starter adalah Bakteri Asam laktat yang mengubah laktosa menjadi asam laktat. Ada dua jenis starter yang digunakan dalam fermentasi susu untuk memproduksi curd , yaitu starter I ( S. thermophilus, L. achidophilus, dan Bifidobakter ) dan starter II ( L. achidophilus, dan Bifidobakter ). Setiap starter ditambahkan pada susu dengan variasi konsentrasi (3%, 5%, 7%, 10%, dan 12%), selanjutnya konsentrasi optimum starter ditentukan dengan mengukur konsentrasi asam laktat pada curd . Konsentrasi optimum starter I dicapai pada 10% dan 12% pada starter II. Kadar lemak dalam curd yang dihasilkan dari starter I lebih besar daripada starter II. Kandungan lemak tinggi dalam curd diharapkan akan menghasilkan rasa keju yang lebih baik.
English Abstract
This research was conducted to study the effect of type and concentration of the starter on curd quality. The type of the starter is lactic Acid Bacteria that convert lactose into lactic acid. There were two type of starter that was used to fermentation the milk to produce curd . There was Starter I ( S. thermophilus, L. achidophilus, and Bifidobakter ) and Starter II ( L. achidophilus, and Bifidobakter ). Each starter was added to milk in various concentration ( 3%, 5%, 7%, 10%, and 12%), then the optimum concentration of the starter was determined by measuring the lactic acid concentration of the curd . The optimum concentration of the satrter was reached at 10% of the sarter I and 12% of sarter II. Fat content in curd that was produced from sarter I is higher than starter II. The high fat content in curd is expected to produce better cheese flavor.
