Abstract
Limbah kulit keras (cangkang) jumlahnya dapat mencapai sekitar 40-60 % dari total berat rajungan. Kitosan merupakan polisakarida turunan kitin yang dapat membentuk edible film yang kuat, elastis, fleksibel, dan sulit dirobek. Edible film merupakan lapisan tipis yang dapat langsung dikonsumsi, dapat terbuat dari hidrokoloid, yang terdapat pada cangkang hewan invertebrata laut berkulit keras seperti Rajungan. Tujuan penelitian ini untuk mengetahui konsentrasi kitosan dan sorbitol yang baik pada pembuatan edible film. Metode yang digunakan pada penelitian ini dimulai proses pembuatan kitosan dari kulit rajungan. Proses pembuatan edible film dari kitosan. Metode penelitian menggunakan Rancangan Tersarang, dua faktor terdiri tiga level yaitu faktor konsentrasi kitosan 2%, 3%, 4% dan faktor konsentrasi sorbitol 1%, 2%, 3% dengan dua penggulangan. Parameter yang diuji ketebalan, kuat tarik, elongasi, laju transmisi uap air, dan kadar air. Uji ragam data dengan ANOVA dan diuji lanjut uji BNT, taraf nyata α = 0,05. Penentuan perlakuan terbaik menggunakan metode Multiple Attribute, jika hasil nilai ANOVA tidak dapat digunakan menentukan perlakuan terbaik. Hasil penelitian menunjukkan perlakuan terbaik penggunaan kitosan 4% dengan penambahan sorbitol 1%. Pada konsentrasi kitosan 2% yaitu sorbitol 1% dengan nilai ketebalan 0,06 mm, LTUA 0,625 gr/m2/jam, kuat tarik 2,75 N, elongasi 32,67%, dan kadar air 18,26%. Pada faktor konsentrasi kitosan 3% yaitu sorbitol 1% dengan nilai ketebalan 0,10 mm, LTUA 1,736 gr/m2/jam, kuat tarik 2,75 N, elongasi 35%, dan kadar air 18,58%. Pada faktor konsentrasi kitosan 4% yaitu sorbitol 1% dengan nilai ketebalan 0,10 mm, LTUA 1,111 gr/m2/jam, kuat tarik 6,05 N, elongasi 48,33%, dan kadar air 18,91%.
English Abstract
Waste tough skin (shell) can reach about 40-60% of the total weight of crabs. Chitosan is polysaccharide, chitin derivative that can form edible film is trong, elastic, flexible and hard to shredded. Edible film is a thin layer that can be directly consumed, can be made of hydrocolloid, which is contained in the shells of marine invertebrates shellfish such as crabs. The purpose of this study to determine the concentration of chitosan and sorbitol are good at making edible film. The method used in this research begins the process of making the chitosan from crab shell. The process of making edible film of chitosan. The research method uses Nested design, two-factor consists of three levels, is chitosan concentration factor of 2%, 3%, 4% and sorbitol concentration factor of 1%, 2%, 3% with two repetition. Parameter to test thickness, tensil strength, elongation, WVPR, and moisture content. Test kinds of data with ANOVA and tested further LSD, real level of α = 0.05. Determining the best treatment using method Multiple Attribute, if the value of the ANOVA results can not be used determine the best treatment. The results showed the best treatment use chitosan 4% with sorbitol 1%. At 2% chitosan concentration factor, that is sorbitol 1% with a thickness of 0.06 mm, WVPR 0.625 gr / m2 / h, 2.75 N tensile strength, elongation 32.67%, and the moisture content of 18.26 %. At 3% chitosan concentration factor, that is sorbitol 1% with a thickness of 0.10 mm, WVPR 1.736 gr / m2 / h, 2.75 N tensile strength, elongation of 35%, and moisture content of 18.58%. At 4% chitosan concentration factor, that is sorbitol 1% with a thickness of 0.10 mm, WVPR 1.111 gr / m2 / h, 6.05 N tensile strength, elongation 48.33%, and 18.91% moisture content.
