Abstract
Sifat susu yang mudah rusak menyebabkan pentingnya dilakukan pengolahan susu. Proses pengolahan susu bertujuan untuk berkualitas tinggi, berkadar gizi tinggi, tahan simpan, mempermudah pemasaran dan transportasi. Proses pengolahan susu selalu berkembang sejalan dengan berkembangnya ilmu dibidang teknologi pangan. Salah satu perusahaan penghasil yoghurt yaitu CV. Brawijaya Dairy Industry yang berlokasi di Jalan Raya Junrejo, Kota Batu, Jawa Timur. Fokus utama CV. Brawijaya Dairy Industry dalam kegiatan produksinya adalah menghasilkan keju, susu pasteurisasi dan yoghurt. Selama ini, di CV. Brawijaya Dairy Industry dalam proses produksi dihadapkan pada beberapa permasalahan, diantaranya adanya kerusakan mesin saat proses produksi serta permasalahan lainnya yaitu dihadapkan dengan banyaknya pesaing, sehingga untuk menghadapinya perusahaan perlu mengetahui cara memenangkan persaingan. Salah satu cara yang dapat dilakukan perusahaan adalah dengan menghasilkan produk yang berkualitas dengan pemakaian energi dan sumber daya yang kecil untuk mencapai keuntungan yang maksimal. Hal ini menuntut perusahaan untuk meningkatkan efisiensi di bagian produksi. Oleh karena itu, analisis efisiensi perlu dilakukan di CV. Brawijaya Dairy Industry. Hasil dari analisis akan memberikan usulan perbaikan nilai proses yang inefisien dan diharapkan dapat digunakan sebagai bahan evaluasi perbaikan proses produksi. viii Metode yang digunakan untuk mengukur efisiensi proses produksi adalah Data Envelopment Analysis (DEA) yang berorientasi input. Variabel input yang digunakan untuk mengukur efisiensi dari Decision Making Unit (DMU) adalah X1: bahan baku, X2 : paid hour, X3: losses. Variabel output yang digunakan Y1: volume, Y2: hasil produksi, Y3: hasil penjualan. Hasil perhitungan dengan DEA terdapat 40 proses produksi yang tidak efisien secara teknis. Yoghurt strawberry terdapat sembilan bulan produksi yang inefisien dengan rata-rata nilai efisiensi 0.997. Yoghurt pisang terdapat sepuluh bulan produksi yang inefisien dengan rata-rata nilai efisiensinya 0.987. Yoghurt melon terdapat delapan bulan produksi yang inefisien dengan rata-rata 0.979. Yoghurt leci terdapat tujuh bulan produksi yang inefisien dengan rata-rata 0.936. Yoghurt jambu biji terdapat lima bulan produksi yang inefisien dengan rata-rata 0.955.
English Abstract
The nature of the milk that is easily damaged causing the importance of milk processing. Milk processing aimed at containing high-quality, high-nutrition, saved, simplify marketing and transportation. Milk processing is always evolving in line with the development of science in food technology. One of the companies that producing yoghurt called CV. Brawijaya Dairy Industry that is located on Jalan Raya Junrejo, Batu, East Java. The main focus of CV. Brawijaya Dairy Industry in its production activity is making cheese, pasteurized milk and yogurt. During this time, CV. Brawijaya Dairy Industry in the production process is faced with several problems, including the damaged of the engine when the production process as well as other problems that is faced with a large number of competitors, so as to deal with it companies need to know how to win the competition. One way the company can do is to produce a quality product with the use of energy and resources is small to achieve the maximum pro it. It is demanding the company to increase efficiency in the production section. Therefore, analysis of efficiency needs to be done on the CV. Brawijaya Dairy Industry. The results of the analysis will provide proposals for improvements to the process value is inefisien and is expected to be used as evaluation material production process improvement. The method used to measure the efficiency of the production process is a model of Data Envelopment Analysis (DEA) with input oriented. Variables input are used for measuring the efficiency of Decision Making Units (DMU) is X1: x raw material, X2 : paid hour, X3: losses. Output variables are used Y1: Volume, Y2: production, Y3: sales results. Results of calculation by DEA showed that 40 production process is technically inefficient. Strawberry yogurt contained nine moths of production with an average of efficiency value 0,997. Banana yogurt contained ten moths of production with an average of efficiency value 0,987. Melon yogurt contained eight moths of production with an average of efficiency value 0,979. Lychee yogurt contained seven moths of production with an average of efficiency value 0,936. Guava yogurt contained five months of production with an average of efficiency value 0,955.
