Abstract

Penelitian ini bertujuan untuk menentukan kemampuan produksi susu pasteurisasi, menentukan faktor-faktor yang menyebabkan ketidaksesuaian produk susu pasteurisasi di KAN Jabun, Kabupaten Malang. Keputusan perbaikan kualitas susu pasteurisasi JAB Milk dilakukan dengan menggunakan metode Six Sigma. Usulan perbaikan pada penelitian ini menggunakan metode FMEA dan Teoriya Resheniya Izobreatatelskikh Zadatch (TRIZ). Hasil penelitian menunjukkan bahwa proses produksi susu pasteurisasi di KAN Jabung masih dalam kondisi terkontrol. Pencapaian kualitas produk susu pasteurisasi JAB Milk berada di level 3,04 sigma. Hasil finalyield yang diperoleh sebesar 75,4%, sehingga kemampuan dalam menghasilkan produk sudah dapat dikatakan cukup baik atau layak karena berada diatas rata-rata industri di Indonesia yaitu≥ 69,2%. Faktor yang menyebabkan ketidak sesuaian produk susu pasteurisasi pada proses produksi adalah mesin, manusia, metode, lingkungan dan bahan baku. Usulan perbaikan dari analisis dengan menggunakan metode TRIZ yaitu checking dan perawatan secara terjadwal, monitoring terkait prosedur pemasangan dan pengecekan posisi lid, melakukan pengecekan standar kualitas bahan lid, monitoring terhadap tenaga kerja, monitoring terhadap prosedur kerja, membuat Standard Operating Procedure (SOP), mengatur agar ruangan tidak, pemanfaatan lampu dioptimalkan, serta penambahan alarm baik berupa bunyi atau lampu sebagai tanda ketika suhu mesin mengalami ketidakstabilan.

English Abstract

This research aims to determine the ability of the production of pasteurized milk, the determining factors that cause discrepancies in pasteurized milk products Cooperative Agro Niaga Malang Jabung. The decision of repair quality of pasteurized milk JAB Milk is done using the method of Six Sigma. The proposed improvements in this study using the method of Failure Modes and Effects Analysis and Teoriya Resheniya Izobreatatelskikh Zadatch (TRIZ). The results showed that the production of pasteurized milk in Cooperative Agro Niaga Jabung still in controlled conditions. The achievement of quality dairy products pasteurized JAB Milk be at level 3.04 sigma. The final results of the yield obtained amounted to 75.4%, so the ability to produce pasteurized milk can already be said quite good or worthy because it is above the industry average in Indonesia namely ≥ 69,2%. Factors that cause the rendering products pasteurized milk Milk production process on the JAB is a machine, man, method, environment and raw materials. The proposed improvement of the analysis using the method of TRIZ that is unscheduled maintenance and checking, monitoring of related procedures and checking the position of the lid, checking the quality of standard lid, monitoring against labor, monitoring against the work procedures, create a Standard Operating Procedure (SOP), set up the room is not optimized, the utilization of light, as well as the addition of an alarm either the sound or light as a sign when the temperature of the engine is experiencing instability.
