Abstract
Tepung terigu merupakan salah satu produk olahan gandum yang sangat penting sebagai bahan baku utama pembuatan berbagai makanan di Indonesia. PT Indofood Sukses Makmur Bogasari Flour Mills Divisi Tanjung Priok – Jakarta Utara merupakan salah satu perusahaan besar yang ada di Indonesia yang memproduksi tepung terigu. Tujuan dalam penelitian ini adalah untuk mengetahui tingkat produktivitas parsial serta total elemen-elemen produksi sehingga dapat diketahui tingkat produktivitas dalam setiap elemen utama maupun pendukung yang meliputi elemen bahan baku, tenaga kerja, pemakaian jam kerja mesin dan pemakaian energi listrik. Metode pada penelitian ini menggunakan Objective Matrix (OMAX) yang digunakan sebagai metode analisis produktivitas dan juga menggunakan Analytical Hierarchy Process (AHP) sebagai pembobotan pada kuesioner. Berdasarkan hasil penelitian diketahui nilai indeks produktivitas didapatkan nilai indeks tertinggi pada periode 10 di bulan Oktober 2015 dengan nilai sebesar 4,89%. Sedangkan nilai indeks produktivitas terendah didapatkan pada periode 11 yaitu sebesar -8,96%. Untuk menghasilkan output yang produktif setelah dilakukanya pengolahan data dibutuhkan sebanyak 9.449,322 ton bahan baku gandum, 211 pemakaian tenaga kerja, 496,234 jam penggunaan jam kerja mesin dan pemakaian 448,058 kWh energi listrik agar mendapatkan output yang produktif. Produktivitas yang optimal tersebut dapat dicapai dengan cara meningkatkan pengawasan pada pemakaian bahan baku, memberikan motivasi dan dan pengawasan pada pekerja, melakukan pengontrolan penggunaan mesin dan melakukan perawatan mesin secara berkala, serta melakukan pemakaian energi listrik secara efisien dan meminimalisir terjadinya pemborosan pemakaian energi lisitrik.
English Abstract
Wheat flour is one of the wheat processed products that is very important as main raw material to manufacture various food in Indonesia. PT Indofood Sukses Makmur Bogasari Flour Mills Division Tanjung Priok – North Jakarta is one of the big companies in Indonesia that manufacture wheat flour. The goal of this research is to find out the partial productivity levels and total elements of production so we can find out the level of productivity in every major or supporting elements which include elements of raw materials, labor, machine working hours and electricity consumption. The method used in conducting this research is by using Objective Matrix (OMAX) as a method of analysis of the productivity and also by using Analytical Hierarchy Process (AHP) as the weighting on the questionnaire. Based on the research results, it shows that the productivity index values is known as the highest index value on the period 10 October 2015 with the value shown as 4,89%. While the lowest productivity index values obtained on the period of 11 that is -8,96%. To produce a productive output after conducting the data processing, 9,449.322 tons of raw wheat is needed, 211 of labor usage, 496,234 hours use of the machine working hours and the 448.058 kWh electricity consumption in order to generate a productive output. The optimum productivity can be achieved by increasing the supervision on the use of raw materials, giving motivation and supervising the workers, controlling machine operation and performing maintenance for machine periodically, as well as implementing an efficient way of electricity consumption and minimize the occurrence of electricity consumption waste.
