Abstract
Kelompok Peternak Rojokoyo merupakan salah satu kelompok masyarakat di Desa Argosari Malang yang memiliki usaha mandiri pengolahan susu pasteurisasi. Kelompok ini masih menggunakan metode secara konvensional dalam proses pasteurisasi sehingga suhu pasteurisasinya tidak terkontrol, pengadukan tidak merata, proses lama dan kurang higeinis. Salah satu metode pasteurisasi yang dapat digunakan adalah ohmic heating karena memiliki kelebihan prosesnya cepat 15 liter hanya 170 menit, panasnya merata dan tidak menurunkan kualitas susu. Pemanasan ohmik merupakan suatu proses dimana arus listrik dilewatkan melalui bahan pangan, akibatnya terjadi pembangkitan energi internal pada bahan yang kemudian akan menghasilkan sebuah pola pemanasan luar dan dalam. Pada hasil uji laboratorium TPC hasil ohmic heating sebesar 6,2x103 ml/cfu dan kadar protein sebesar 2,51%. Penelitian ini bertujuan untuk mengetahui desain rancang bangun, prinsip kerja dan hasil pasteurisasi mesin pasteurisasi susu sapi yang otomatis berbasis electrical ohmic heating. Efisiensi dari mesin pasteurisasi susu sapi ini mencapai 89,73%.
English Abstract
Rojokoyo Breeders group is one of the community group in the Argosari village Malang which has independent business processing of pasteurized milk. This group used conventional method of pasteurization. There are many disadvantag with this method such as uncontrolled temperature, not evenly stirring, the process takes a long time, and less hygiene. One of the pasteurization method that can be used is ohmic heating. Ohmic heating is a process which an electric current is passed through food. Ohmic heating has advantages such as the heat spread evenly, and does not degrade the nutrient in the milk. The purposes of this research was to knew the design, working principles and results of pasteurized cows milk with automatic pasteurization machine based on ohmic heating technology. The research showed that ohmic heating can decrease time consumption of 15 liters milk pasteurization with only 170 minutes long process. The TPC test was showed that milk with ohmic heating treatment has 6, 2x103 ml/cfu, and 2,51% protein levels. The efficiency of this cows milk pasteurization machines reached 89,73%.
