Abstract
Koperasi Unit Desa (KUD) DAU merupakan salah satu bentuk koperasi yang bergerak dalam bidang industri pangan khususnya produk susu yang memproduksi 2 macam susu yaitu susu segar dan susu pasteurisasi. Manajemen rantai pasok produk pertanian khususnya susu segar berbeda dengan manajemen risiko rantai pasok produk manufaktur karena produk susu bersifat mudah rusak oleh mikrobial dan sangat berpotensi tinggi rusak sebelum diproses, sehingga dibutuhkan analisis risiko untuk meminimalkan potensi risiko yang terjadi pada rantai pasok produk susu pasteurisasi di KUD DAU. Penelitian ini bertujuan untuk mengidentifikasi, melakukan penilaian dan pengukuran risiko rantai pasok serta membuat upaya mitigasi risiko pada rantai pasok produk susu pasteurisasi. Fuzzy FMEA (Fuzzy Failure Mode and Effect Analysis) digunakan pada penelitian ini untuk penilaian risiko dengan mempertimbangkan nilai severity (S), occurence (O), dan detection (D). Logika fuzzy dalam FMEA digunakan untuk membantu menentukan nilai Risk Priority Number (RPN) dari kegagalan yang terjadi. Responden pada penelitian ini adalah 3 pakar dari peternak, 3 pakar dari KUD DAU, dan 1 pakar dari retailer. Hasil penilaian risiko yang ada di setiap kegiatan rantai pasok akan dipilih risiko dengan kategori paling tinggi untuk selanjutnya dibuat alternatif mitigasi risikonya. Alternatif strategi mitigasi risiko akan dianalisis dengan metode AHP (Analytical Hierarchy Process) dengan menggunakan software Criterium Decision Plus. Alternatif strategi mitigasi risiko dilakukan melalui wawancara terhadap 2 pakar yang memahami tentang kondisi risiko rantai pasok yang terdapat pada KUD DAU. xiv Berdasarkan hasil penilaian, risiko yang prioritas untuk ditangani pada tingkat peternak yaitu risiko kontaminasi antibiotik pada susu (6.302), KUD DAU yaitu risiko mesin dan alat mengalami kerusakan selama proses pengolahan (6.935), dan retailer yaitu risiko kekurangan persediaan produk susu pasteurisasi (5.914). Prioritas risiko tersebut perlu ditangani untuk minimasi risiko dengan menyusun alternatif strategi mitigasi risiko rantai pasok produk susu pasteurisasi. Alternatif strategi mitigasi risiko yang digunakan di tingkat peternak yaitu mengoptimalkan kebersihan ternak dan kandang ternak (0760), pencegahan penyakit pada ternak (0.144), dan menjaga asupan ternak (0.096). pada tingkat KUD DAU yaitu penerapan preventive maintenance (0.731), pembelian alat dan mesin baru (0.188), dan pelatihan tenaga kerja (0.081). Pada tingkat retailer yaitu menjalin kemitraan (0.600), menjaga pasokan (0.300), dan perbaikan akses informasi (0.100).
English Abstract
“Koperasi Unit Desa (KUD) DAU” is one of agroindustrial companies engaged in food industry especially milk which produce pasteurized and fresh milk. Supply chain management of agricultural products especially for fresh milk is different from the manufactured one due to characteristic of fresh milk that is easily contaminated by microorganisms and has very high risk of damaged before processed. Therefore, a risk analysis is required to minimize the potential risks of pasteurized milk’s supply chain in “KUD DAU”. This research aimed to identify, assess, measure the supply chain risk, and mitigate the supply chain risk of pasteurized milk. Fuzzy FMEA (Fuzzy Failure Mode and Effect Analysis) was used in this research to measure the risk by considering the values of severity (S), occurrence (O), and detection (D). Fuzzy logic in FMEA is used to help determined the risk priority number (RPN) value of failures that occur. The respondent of this research were 3 expert from the farm, 3 expert from ”KUD DAU”, and 1 expert from retailer. The highest risk based on assessment in each supply chain activities was chosen in every category to be mitigated. Alternative strategy for risk mitigation will be analyze by the method of AHP (Analytical Hierarchy Process) using software Criterium Decision Plus. Alternative strategies of risk mitigation were collected by interviewing 2 expert that understand about the condition of supply chain risk in ”KUD DAU”. Based on the assessment value, the risk that urgent to be handled at the farmer level was the contamination risk of antibiotics in milk (6.302), at the “KUD DAU” was the risk of broken machinery and tools during processing (6.935), and at xvi the retailer was the risk of shortage of pasteurized milk products (5.914). The risk priorities need to be mitigated to minimize the risk by arranging alternative strategy to mitigate the supply chain risk of pasteurized milk products. Alternative strategy for risk mitigation used in farm level were optimize cows and their stable hygine (0.760), preventing disease on dairy livestock (0.144), and keep the nutrition of dairy livestock (0.096). The mitigation in were “KUD DAU” needs to implementing preventive maintenance (0.731), purchasing new machine and equipment (0.188), and training the worker (0,081). The mitigation in retailer were looking for partnership (0.600), maintaining the supply (0.300), and fixing access information (0.100).
