Abstract
KSU Brosem merupakan salah satu produsen yang bergerak dalam penjualan produk hasil olahan apel. Salah satu produk yang dihasilkan oleh KSU Brosem adalah minuman sari apel dalam kemasan. Proses produksi minuman sari apel KSU Brosem tidak terlepas dari adanya risiko-risiko atau kendala yang dapat menyebabkan kegagalan proses. Risiko-risiko tersebut dapat berasal dari komponen bahan baku, proses, serta mesin dan peralatan. Oleh karena itu, untuk mencegah terganggunya proses produksi dan menjaga kualitas produk sari apel yang dihasilkan perlu dilakukannya analisis risiko pada proses produksi KSU Brosem. Tujuan dari penelitian ini adalah untuk mengetahui risiko-risiko dan urutan prioritas risiko penyebab kegagalan yang dapat terjadi pada proses produksi sari apel serta menentukan strategi penanganan terhadap risiko atau penyebab kegagalan tersebut. Penelitian ini menggunakan metode MAFMA (Multi Attribute Failure Mode Analysis) dan Fuzzy-AHP. Penelitian dimulai dengan melakukan wawancara atau brainstorming dengan pihak KSU Brosem untuk mengetahui kemungkinan-kemungkinan risiko penyebab kegagalan pada proses produksi sari apel. Penyebab kegagalan potensial dari kemungkinan-kemungkinan risiko tersebut kemudian ditentukan dengan metode Fuzzy-AHP yang menggunakan kriteria dari metode MAFMA yaitu severity (S), occurrence (O), detection (D), dan expected cost. Setelah diketahui penyebab kegagalan yang paling potensial kemudian dapat dirumuskan strategi vii penanganan terhadap risiko atau penyebab kegagalan tersebut untuk meminimalkan dampak atau kerugian yang diakibatkan. Hasil perhitungan dengan metode Fuzzy-AHP menunjukkan terdapat lima risiko kritis pada proses produksi sari apel KSU Brosem. Risiko tersebut antara lain yaitu, kesalahan pengoperasian mesin pengemas (Cause H) dengan bobot prioritas 0,806, suhu sari apel kurang panas ketika pengemasan ke dalam botol (Cause G) dengan bobot prioritas 0,719, kontaminasi dari pekerja dan lingkungan (Cause F) dengan bobot prioritas 0,686, keterlambatan pasokan bahan baku (Cause A) dengan bobot prioritas 0,639, sanitasi mesin dan peralatan kurang maksimal (Cause I) dengan bobot prioritas 0,578. Berdasarkan risiko kritis tersebut maka dapat diberikan rekomendasi perbaikan pada masing-masing risiko. Rekomendasi perbaikan tersebut antara lain yaitu, adanya SOP proses produksi dan IK (Instruksi Kerja) pengoperasian mesin pengemas, melakukan CMC (Counseling, Mentoring, Coaching), penggantian bahan kemasan botol, adanya SOP pekerja dan lingkungan, penggunaan mesin otomatis untuk pengemasan kemasan botol, perbaikan perencanaan persediaan bahan baku, perbaikan komunikasi dengan supplier, dan sanitasi dengan air panas dan bahan sanitizer.
English Abstract
KSU Brosem is a manufacturer that produces the processed apple products. One of the products which produced by KSU Brosem is apple juice. Apple juice production process of KSU Brosem has risks or obstacles that may cause failure of the production process. These risks may be derived from a component of raw materials, processes, and machinery and equipment. Therefore, risk analysis of the production process of apple juice in KSU Brosem is needed to prevent the failure and quality control. The purpose of this study was to determine risks and the priority order of risk that can occur in the production process of apple juice and determine treatment strategies against the risk or the cause of the failure. This study used MAFMA (Multi-Attribute Failure Mode Analysis) and Fuzzy-AHP method. It began by interviewing or brainstorming with the KSU Brosem to determine possible risks causing the failure of the apple juice production process. The cause of the potential failure of the possible risks was determined by the Fuzzy-AHP method by using the criteria of MAFMA that is the severity (S), occurrence (O), detection (D), and the expected cost. Therefore, the most potential causes of failure can be known. So the strategies of risk management or the causes of failure can be formulated. The results of the Fuzzy-AHP method shows that there are five critical risks in the production process of apple juice in KSU Brosem. This risks are including, the human errors when operation of the packaging machine (Cause H) with 0,806 priority weight, suitable temperature when packing into bottles is ix not achieved (Cause G) with 0.719 priority weight, contamination by workers and the environment (Cause F) with 0.686 priority weight, delay of raw materials (Cause A) with 0.639 priority weight, sanitation of machinery and equipment is not optimal (Cause I) with 0.578 priority weight. Based on the critical risks, it can be given recommendations for improvements for each risk. Recommendation for improvement that can be proposed are create the SOP of production process and work instruction for the operation of packaging machine, applying the CMC (Counseling, Mentoring, Coaching), replacement of the bottles materials, create the SOP of workers and the environment, applying an automatic machines for bottles packaging, improving the raw material inventory planning, improving communication with suppliers, and applying sanitation with hot water and sanitizer materials.
