Abstract
Kopi salah satu komoditas yang menjanjikan di Indonesia, karena produksinya mencapai lebih dari 600.000 ton/tahun. Kopi luwak adalah satu produk specialty coffee khas Indonesia yang terkenal di dunia. Bijinya diperoleh melalui feses setelah terfermentasi alami di dalam perut hewan luwak, sehingga menghasilkan rasa dan aroma khas. Tidak banyak orang mengetahui proses pembuatan kopi luwak yang benar sehingga halal dan aman untuk dikonsumsi. Penelitian ini bertujuan untuk mengetahui aspek produksi kopi luwak dan mengetahui pemenuhan aspek kesejahteraan hewan, kehalalan, keamanan, dan kelestarian lingkungan produksi kopi luwak di PT. Perkebunan Nusantara (PTPN) XII. Analisis aspek kesejahteraan hewan mengacu prinsip five freedoms dan Permentan No. 37 Tahun 2015. Aspek kehalalan mengacu HAS 23101. Aspek keamanan dianalisis menggunakan prinsip GMP. Aspek kelestarian lingkungan mengacu UTZ Certified. Penelitian ini dilakukan secara deskriptif analitis dengan mengamati proses produksi kopi luwak dan melakukan audit internal sesuai standar di atas. Hasil penelitian menunjukkan pelaksanaan prinsip kesejahteraan hewan sudah konsisten dengan persentase total 86,43%, namun ada satu prinsip five freedoms belum terpenuhi yaitu kebebasan untuk mengekspresikan perilaku alami dengan persentase 50%. PTPN XII sudah menerapkan prinsip kehalalan sesuai HAS 23101 dengan titik kritis pada pengumpulan biji kopi dari feses luwak dan pencucian biji kopi luwak, serta memiliki sertifikat halal dari LPPOM MUI. Pelaksanaan aspek keamanan kopi luwak sudah konsisten dengan persentase total 76,64%, v namun ada satu ruang lingkup GMP belum terpenuhi yaitu higiene karyawan dengan persentase 50%. Pelaksanaan prinsip kelestarian lingkungan sudah konsisten dan telah memiliki UTZ certified. Hasil analisis di atas diharapkan dapat digunakan untuk memperbaiki kinerja pemenuhan aspek kesejahteraan hewan, kehalalan, keamanan, dan kelestarian lingkungan produksi kopi luwak di PTPN XII.
English Abstract
Coffee is one of the promising commodities in Indonesia which having reached production of more than 600,000 tons/year. Civet coffee is one of the typical Indonesian specialty coffee products that are famous in the world. Civet coffee beans obtained from feces through the process of a natural fermentation in the civet digestive system, so it produces a distinctive taste and flavor. Unfortunately, few people know civet coffee production process correctly for halal and safe to consume. This research aims at determining the production of civet coffee and the fulfillment of the animal welfare, halal, food safety, and preservation of environment on the production of civet coffee at PT. Perkebunan Nusantara (PTPN) XII. Animal welfare analysis refers to the principles of five freedom as well as Agriculture Minister Regulation Number 37 2015. Halal refers to HAS 23101. Food safety is analyzed using the principles of GMP. Preservation of environment refers to UTZ Certified. This research uses descriptive analysis approach by observing the production process of civet coffee, including carry out internal audits in accordance with existing standards mentioned above. The results of this research show the implementation of the principle of animal welfare already consistent with 86,43% of total percentage, but only one principle of five freedom are not met, namely a freedom to express natural behavior with 50% of percentage. PTPN XII already applying the principle of halal according HAS 23101 with critical point on the collection of coffee beans from civet feces and washing the civet coffee beans, and also had a halal certificate from LPPOM MUI. The implementation of food safety production of civet coffee already consistent with vii 76,64% of total percentage, but only one principle of GMP are not met, namely employee hygiene with 50% of percentage. The implementation of preservation of environment already consistent and had a UTZ certified. The results of this research is expected to be used to improve performance of the fulfillment of animal welfare, halal, food safety, and preservation of environment on the production of civet coffee at PTPN XII.
