Abstract
Penelitian ini bertujuan mengetahui atribut prioritas untuk meningkatkan kualitas produk yoghurt di Koperasi Agro Niaga Jabung. Selain itu, untuk mengetahui perbaikan yang perlu dilakukan untuk meningkatkan kualitas produk yoghurt di KAN Jabung. Keputusan usulan perbaikan kualitas produk yoghurt dilakukan dengan metode Quality Function Deployment (QFD). Pemilihan metode tersebut dikarenakan QFD lebih fokus dalam pengembangan dan perbaikan dari keinginan dan kebutuhan konsumen dibandingkan dengan kompetitor lain. Hasil penelitian menunjukkan bahwa rerata benchmarking KAN Jabung masih di bawah pesaingnya yaitu Cimory. Berdasar nilai target didapatkan gap tertinggi yaitu pada atribut manajemen perusahaan sedang gap terendah pada atribut teknik pengolahan yoghurt. Artinya teknik pengolahan yoghurt di KAN Jabung sudah mampu bersaing meskipun masih di bawah Cimory. Atribut prioritas KAN Jabung yaitu teknik pengemasan yang tepat dengan nilai bobot respon teknis sebesar 368,07. Selain itu, atribut penerapan sistem pengendalian mutu (287,44) dan pengembangan produk (265,52) bisa menjadi alternatif pengembangan kualitas yoghurt. Guna meningkatkan kualitas produk yoghurt, KAN Jabung perlu melakukan perbaikan diantaranya yaitu meningkatkan teknik pengemasan misalnya proses penutupan botol yang sebelumnya dilakukan dengan cara manual ditingkatkan menjadi semi otomatis atau otomatis, menambahkan bahan tambahan pangan untuk meningkatkan kualitas produk serta viii melakukan pengembangan produk khususnya variasi volume kemasan.
English Abstract
This study is aimed to know attribute priority to improve product quality yoghurt in Cooperative Agro Niaga Jabung. In addition, to determine the repairs that need to be done to improve product quality yoghurt in KAN Jabung. Decision proposed improvement of product quality yogurt made by the method of Quality Function Deployment (QFD). Selection this method because QFD method is more focused in the development and improvement of consumer wants and needs to do a comparison to other competitors. The results showed that the average of benchmarking KAN Jabung average is still below with their competitors, that is Cimory. Based on the target value obtained the highest gap in the companys management attributes the gap while the lowest for the attributes of yogurt processing techniques. It’s means yoghurt processing technique in KAN Jabung has been able to compete even though still under Cimory. KAN Jabung priority attribute that proper packaging techniques with technical responses weight value of 368,07. In addition, the application of the system attributes of quality control (287,44) and product development (265,52) could be an alternative in the development quality of yoghurt. Improvements that need to be done in KAN Jabung to increase product quality yoghurt among which improving packaging techniques, for example the bottle closure previously done manually upgraded to semi-automatic or automatic, adding food additives to improve product quality and product development, especially variations in the volume of packaging.
