Abstract

Penelitian ini bertujuan untuk menentukan kemampuan proses sealing, menentukan faktor-faktor yang menyebabkan ketidaksesuaian produk dan menentukan solusi perbaikan untuk mengurangi ketidaksesuaian produk sari apel di KSU Brosem Kota Batu. Pengendalian kualitas sari apel di KSU Brosem dilakukan dengan metode Six Sigma. Usulan perbaikan dilakukan dengan metode Failure Modes and Effect Analysis dan Teoriya Resheniya Izobreatatelskikh Zadatch (TRIZ). Hasil penelitian menunjukkan bahwa proses sealing masih dalam keadaan terkontrol. Pencapaian kualitas produk sari apel KSU Brosem berada di level 3,56 sigma. Hasil final yield sebesar 90,23%, sehingga kemampuan dalam menghasilkan produk sari apel sudah layak dan cukup baik karena berada di atas rata-rata industri di Indonesia. Faktor yang menyebabkan ketidaksesuaian produk sari apel pada proses sealing adalah mesin, manusia, metode, bahan baku dan lingkungan. Usulan perbaikan dari analisis dengan metode TRIZ yaitu pengecekan dan perawatan mesin secara rutin, pembuatan jadwal untuk pengecekan dan perawatan terhadap mesin, monitoring terhadap prosedur kerja dan tata tertib dalam bekerja, penggunaan alarm baik berupa bunyi atau lampu sebagai signal pada mesin ketika suhu mesin tidak stabil, prosedur pemasangan dan pengecekan posisi lid, pengecekan standar kualitas bahan lid, penambahan lampu dan perubahan jenis lampu yang memiliki penerangan baik serta pembuatan Standard Operating Procedure secara terperinci.

English Abstract

The purposes of this study were to determine the ability of sealing process, to determine the factors that cause defect products and to recommond the improvement solution to reduce the defect of apple juice products in KSU Brosem, Batu. Quality control of apple juice at KSU Brosem can do with the Six Sigma method. Proposed improvements were made by the Failure Modes and Effect Analysis and Teoriya Resheniya Izobreatatelskikh Zadatch (TRIZ) method. The results of the research showed that the sealing process was still in controlled condition. Achievement of product quality of apple juice was at the level of 3.56 sigma. The result of final yield is 90.23%, so the ability to produce apple juice was feasible and good enough because it was above the industry average in Indonesia. Factors that cause defect product of apple juice in sealing process were machine, man, method, material, and environment. The recommendation of improvement using TRIZ method were routine checking and maintain engine, making a schedule for checking and maintenance of the machines, monitoring of the working procedures and the discipline of work, using alarm either sound or light as signal to the engine when the engine temperature is not stable, checking the installation procedure and the position of the lid, checking the quality standards of lid materials, adding lights and changing the type of lamp that has good lighting, and making the detail of Standard Operating procedure.
