Abstract
PT Eka Timur Raya (ETIRA) bergerak dalam pengolahan dan pengalengan jamur kancing (champignon) sejak tahun 1999. Produk jamur kaleng PT ETIRA digunakan untuk memenuhi kebutuhan pasar lokal serta ekspor ke beberapa negara Timur Tengah, Amerika Serikat, dan Jepang. Produksi jamur kaleng terbanyak di PT ETIRA adalah jamur kaleng ukuran 4 oz (1 oz = 28,35 gram) dengan presentase 92,8% dari total produksi. PT ETIRA berusaha memberikan yang terbaik bagi pelanggan, baik dari segi mutu maupun harga. Kenyataannya, dalam proses produksi masih terdapat kerusakan atau cacat produk jamur kaleng ukuran 4 oz. Tujuan penelitian ini untuk mengetahui pengendalian kualitas pada proses produksi jamur kaleng di PT ETIRA menggunakan metode six sigma. Metode six sigma yang digunakan dibatasi pada tahap define, measure, analyze dan improve. Tahap improve dilakukan menggunakan salah satu alat implementasi kaizen yaitu Five M Checklist untuk memberikan rekomendasi perbaikan agar mengurangi defect pada kemasan jamur kaleng 4 oz. Berdasarkan hasil penelitian diketahui jenis cacat terbesar pada kemasan jamur kaleng adalah knocked down flange. Nilai sigma sebesar 3.46, final yield 97,5% dan nilai indeks kapabilitas proses (Cp) sebesar 1,15. Penyebab terjadinya knocked down flange adalah pekerja kurang teliti, pekerja kurang memahami SOP produksi, kesalahan setting up mesin, mesin seamer tidak stabil, komponen mesin seamer aus, material kemasan kurang baik dan area produksi tidak nyaman. Saran perbaikan dengan Five M Checklist yang dapat dilakukan perusahaan adalah memberikan arahan pada pekerja, melakukan training SOP untuk pekerja, melakukan kontrol dan perawatan mesin lebih ketat lagi, menjadwalkan penggantian komponen mesin, mengawasi dan memberikan pelatihan operator mesin, pemeriksaan material kaleng lebih ketat dan menambah turbine ventilator di pabrik.
English Abstract
PT Eka Timur Raya (ETIRA) is a company engaged in the processing and canning of button mushroom (champignon) since 1999. Canned mushrooms production in PT ETIRA used to meet the demand of the local market and are also exported to several countries in the Middle East, USA, and Japan. Approximately,92,8% of total production are in size 4 oz (1 oz = 28,35 grams). PT ETIRA always strive to provide the best performance for the customer, both in quality and price. In fact, there are damages or defects in the 4 oz canned mushrooms in production process. The purpose of this study was to determine quality control in the production process of canned mushrooms in PT ETIRA using six sigma. Stages of six sigma method which were used was limited to the define, measure, analyze and improve. Improve stage was done using one of the implementation tools of kaizen namely Five M Checklist to provide recommendations for improvement to reduce defects in the packaging of 4 oz canned mushrooms. Based on the results of research known most types of defects in packaging canned mushrooms was knocked down flange.The measurement results showed 3,46 sigma value, 97,5% of final yield and 1,15 of process capability index (Cp). The cause of knocked down flanged were careless of workers,workers don’t understand the production SOP, machine setting up fault, unstability of seamer machine, worn out of seamer machine component, poor packaging material and uncomfortable production area. Suggested improvement using Five M Checklist for the company will give direction for workers, provide a SOP training for workers, control and maintenance of seamer machine, arrange schedule replacement of seamer machine components, supervise machine operator also provide machine operator training, perform a more rigorous inspection of cans material and add turbine ventilators in processing factory.
