Abstract

Sektor perindustrian merupakan sektor yang cukup diandalkan dalam perekonomian Indonesia, terutama yang berasal dari sektor industri pengolahan hasil pertanian. Komoditas kedelai merupakan salah satu hasil pertanian yang masih banyak dimanfaatkan, seperti pada pembuatan tahu. Berdasarkan survei sosial ekonomi nasional 2009-2013 mengenai konsumsi rata-rata per kapita setahun tahu, terdapat kecenderungan peningkatan, sehingga mendorong produsen tahu untuk meningkatkan jumlah produksi. UKM Karya Perdana merupakan UKM penghasil tahu mentah dan tahu goreng, dimana dalam proses produksi dibutuhkan bahan berupa kedelai, minyak goreng dan kemasan yang ketersediaan nya harus dijaga agar tidak mengganggu proses produksi. Namun, dalam perkembangannya terdapat permasalahan, yakni sistem pengendalian persediaan bahan yang tidak terstruktur. Tujuan penelitian ini adalah menganilisis sistem pengendalian persediaan kedelai, minyak goreng, dan kemasan yang optimal dan menentukan alternatif teknik pengendalian persediaan bahan yang dapat diterapkan pada UKM Karya Perdana. Metode yang digunakan dalam penelitian adalah material requirements planning (MRP) yang bertujuan untuk mengidentifikasi kapan dan berapa banyak bahan yang harus dipesan. Penentuan ukuran lot (lot sizing) menggunakan teknik lot sizing Economic Order Quantity (EOQ), Lot For Lot (LFL), dan Part Period Balancing (PPB). Pemilihan teknik lot sizing dilakukan dengan membandingkan ketiga teknik tersebut. Teknik yang dipilih yakni teknik yang menghasilkan biaya persediaan terkecil. Hasil pengeplotan data menunjukkan metode peramalan yang bisa digunakan yakni ARIMA dan Winter. Perhitungan teknik lot sizing menyatakan bahwa total biaya persediaan menggunakan LFL untuk kedelai sebesar Rp. 45.711.238, minyak goreng sebesar Rp. 6.144.926, dan kemasan sebesar Rp. 3.210.334; total biaya persediaan menggunakan EOQ untuk kedelai sebesar Rp. 55.882.465, minyak goreng sebesar Rp. 5.712.065, dan kemasan sebesar Rp. 2.589.247; dan total biaya persediaan menggunakan PPB untuk kedelai sebesar Rp. 43.904.091, minyak goreng sebesar Rp. 4.656.186, dan kemasan sebesar Rp. 2.120.355. Berdasarkan nilai error terkecil, metode peramalan yang dipilih yakni Winter Exponential Smoothing karena memiliki nilai error berupa MAPE, MAD, dan MSD terkecil; apabila berdasarkan kriteria biaya persediaan terkecil, teknik lot sizing yang dipilih yakni PPB karena menghasilkan total biaya persediaan terkecil.

English Abstract

The industrial sector is a sector which is quite reliable in Indonesia's economy, especially those from sectors of the agricultural processing industry. Soybean is one of the commodities in agriculture which is still much exploited, such as the making of tofu. Based on the national socio-economic survey 2009-2013 regarding the average consumption per capita a year of tofu, there is tendency of an increase, thereby encouraging tofu manufacturers to increase the amount of production. UKM Karya Perdana is the manufacturer of raw tofu and fried tofu, where the material is required in the production process in the form of soybeans, cooking oil and packaging that its availability must be maintained in order not to disrupt the production process. However, there are problems in its development, namely the system of inventory control of materials that are not structured. The purpose of this research is to analyze the inventory control system for optimal soybeans, cooking oil, and packaging, and specify alternate materials inventory control techniques can be applied to UKM Karya Perdana. The methods used in the study is a material requirements planning (MRP) which purpose to identify when and how much material to be ordered. Determination of the size of the lot (lot sizing) using the lot sizing techniques of Economic Order Quantity (EOQ), Lot For Lot (LFL), and Part Period Balancing (PPB). Determination of lot sizing technique uses lot sizing Economic Order Quantity (EOQ), Lot For Lot (LFL), and Part Period Balancing (PPB). The selection techniques of lot sizing is done by comparing the three such techniques. The x selected technique is technique which produced the smallest inventory costs. Results of data ploting indicates forecasting method that could be used i.e., ARIMA and Winter. Lot sizing technique calculations stated that the total cost of the inventory using the LFL for soybeans amounted to Rp. 45.711.238, cooking oil at Rp. 6.144.926, and packaging at Rp. 3.210.334; the total cost of the inventory using the EOQ for soybeans amounted to Rp. 55.882.465, cooking oil at Rp. 5.712.065, and packaging at Rp. 2.589.247; and the total cost of the inventory using the PPB for soybeans amounted to Rp. 43.904.091, cooking oil at Rp. 4.656.186, and packaging at Rp. 2.120.355. Based on the smallest error value, the selected method of forecasting is the Winter Exponential Smoothing because it has a smallest error value in the form of MAPE, MAD, and MSD; if based on the criteria of the smallest inventory costs, lot sizing technique that PPB is selected because it produces the smallest total inventory cost
