English Abstract
Cocoa Leather is an agro-industrial waste produced cocoa plant (Theobroma cacao L.) textured thick and hard. Cocoa Leather generally have a lower quality due to high coarse fiber that make it difficult to digest by cattle. Therefore it is necessary to have a substance that can improve the fiber content in the cocoa leather to be easily digested by cattle. The fermentation process uses enzymes, the enzymes cellulase and xylanase wherein the enzymes of microorganisms perform oxidation, reduction and other chemical reactions, resulting in a chemical change to produce specific products that can improve the fiber content that can be digested by cattle. Fermentation cocoa leather with cellulase and xylanase enzymes using Response Surface Method Centralized Composite shaped design using Design Expert 7 program. Results from the optimization of data analysis showed that all experimental variables significantly influence the results. Optimal conditions for fermentation Fruit Leather Cocoa influence on the percentage of NDF and ADF are the cellulase enzyme concentration of 350 U / ml, enzyme xylanase 175 U / ml and the incubation time is 2.68 days with a percentage of NDF and ADF are produced each - each amounting to 65.15609 % and 58.3999%
