Abstract

Pada era globalisasi sekarang ini, masyarakat menjadi lebih cerdas dalam memilih produk yang berkualitas, sehingga produsen makanan perlu memberikan bukti nyata bahwa produknya berkualitas dengan memiliki sertifikat ISO 22000:2005 (Sistem Manajemen Keamanan Pangan). PT. Aerofood ACS merupakan anak perusahaan Garuda Indonesia, dengan tugas menyediakan layanan jasa katering. Saat ini, PT. Aerofood ACS telah memiliki dua standar mutu internasional yaitu, ISO 9001:2008 (Sistem Manajemen Mutu) dan ISO 22000:2005 (Sistem Manajemen Keamanan Pangan). Program magang ini dilakukan di PT. Aerofood ACS Surabaya, yang bertujuan untuk membandingkan penerapan Sistem Manajemen Keamanan Pangan (Food Safety Management System) di PT. Aerofood ACS Surabaya dengan persyaratan ISO 22000:2005 menggunakan metode gap analysis (analisa kesenjangan). Hasil gap analysis menunjukkan bahwa PT. Aerofood ACS Surabaya telah menerapkan 68 dari 75 kriteria persyaratan ISO 22000:2005. Tujuh dari 75 kriteria yang masih kurang adalah klausul 5. 4 (tanggung jawab dan wewenang), klausul 5. 6. 1 (komunikasi eksternal), klausul 5. 6. 2 (komunikasi internal), klausul 5. 7 (persiapan dan respon darurat), klausul 6. 2. 2 (kompetensi, kepedulian, dan pelatihan), dan klausul 7. 2 (PRP). Rekomendasi untuk perusahaan adalah PT. Aerofood ACS Surabaya perlu menjaga dan meningkatkan Sistem Manajemen Keamanan Pangan yang telah diterapkan serta perlu meningkatkan kedisiplinan dan kepedulian mengenai pentingnya keamanan pangan.

English Abstract

In the era of globalization, people became more intelligent for choosing a quality product, so that food manufacturers competing to provide their product is qualify. One of that way is having a certificate of ISO 22000:2005 about Food Safety Management System. Aerofood ACS is a subsidiary of the company Garuda Indonesia, where their job was to provide catering services. Currently, PT. Aerofood ACS has two international quality standards, ISO 9001: 2008 (Quality Management System) and ISO 22000: 2005 (Food Safety Management System). This internship program conducted at PT. ACS Aerofood Surabaya, which aims to compare the implementation of Food Safety Management System in PT. AerofoodACS Surabaya with the requirements of ISO 22000: 2005 using gap analysis method. The result of gap analysis indicate that the PT. AerofoodACS Surabaya has implemented 68 of the 75 criteria of the requirements of ISO 22000: 2005. There are 7 of the 75 criteria, which is not implemented properly.They are: clause 5. 4 (responsibility and authority), clause 5. 6. 1 (external communication), clause 5. 6. 2 (internal communication), clause 5. 7 (preparedness and emergency response ), clause 6. 2. 2 (competence, awareness and training), and clause 7. 2 (PRP). Recommendation for the company is PT. Aerofood ACS Surabaya need to maintain and improve the Food Safety Management System has been implemented and the need to improve discipline and awareness of the importance of food safety.
