Abstract
Penggunaan plastik sintetis dalam mengemas produk makanan dapat meyebabkan kerusakan lingkungan dan dapat mengganggu kesehatan. Diperlukan jenis kemasan yang dapat diuraikan secara alami, dapat langsung dimakan dengan produk yang dikemas, dan tidak menimbulkan efek buruk terhadap kesehatan. Alternatif kemasan yang dapat dikembangkan saat ini adalah edible film antibakteri. Tujuan dari penelitian ini adalah untuk mengetahui sifat daya hambat dan sifat mekanik dari edible film tepung maizena dengan kombinasi penambahan gliserol dan ekstrak daun beluntas. Penelitian ini menggunakan RAK dengan 2 faktor yang masing-masing terdiri dari 3 level dengan 2 ulangan yaitu konsentrasi gliserol (G) (8%, 10%, dan 12%) dan konsentrasi ekstrak daun beluntas (B) (20%, 25%, dan 30%) dengan variabel tetap Tepung maizena 10gr dan akuades 120ml.Parameter penilaian yaitu daya hambat terhadap bakteri Escherichia coli, kuat tarik, elongasi, laju transmisi uap air, kecerahan dan ketebalan. Data yang diperoleh diolah dengan ANOVA (analisis sidik ragam), jika pada faktor terdapat berbeda nyata maka dilanjutkan dengan BNT, jika pada interaksi antar faktor berbeda nyata maka dilanjutkan dengan DMRT.Pemilihan perlakuan terbaik diolah menggunakan Multiple Attribute. Hasil penelitian menunjukkan sifat mekanis dan sifat daya hambat edible film Maizena terbaik yaitu pada perlakuan kombinasi gliserol 8% dan ekstrak daun beluntas 20% dengan nilai kuat tarik sebesar 9.35 N/cm2, elongasi sebesar 13.34 %, Laju transmisi uap air sebesar 3.60x10-6 gr/cm2/24jam, kecerahan sebesar 65.15 ketebalan 0.045mm dan daya hambat sebesar 5.92 mm. Pada pengujian pada fillet ikan nila menunjukkan bahwa edible film belum dapat melindungi fillet ikan nila yang telah ditentukan dalam SNI 7388:2009.
English Abstract
The using of sintetic plastic for food packaging could cause an environmental damage and be effected on health. It was required a various packaging that could be decomposed naturally, instantly eaten with packed products, and did not cause adverse effect on health. Alternative packaging that might be developed now was edible film antibacterial.The purpose of this study was to find of antibacterial activity and mechanical characteristic of cornstarch edible film by combination of glycerol and leaves beluntas extract addition. This research used a randomized block design (RBD) with 2 factors, each factor was consisting of 3 levels with 2 repetition: glycerol concentration ( G ) ( 8 % , 10 % , and 12 % ) and beluntas leaves extract concentration (B ) ( 20 % , 25 % , and 30 % ) by fixed variable of cornstarch 10 gr and distillation water 120 ml. The assessment parameters were antibacterial activity against bacteria Escherichia coli, tensile strength, elongation, water vapor transmission rate, brightness and thickness. Obtained data were tested using ANOVA (analysis of varians), if single factor was significantly different then continued test by LSD, if interactions between two factors were significantly different then continued test by DMRT. Selection the best treatment was processed using multiple attribute. Result showed the best mechanical characteristic and antibacterial activity of edible film cornstarch was in various combination of glycerol 8% and beluntas leaves extract 20% with antibacterial activity tested against Eschericia coli was 5,92 mm, tensile strength 9.35 N/cm2, elongation 13.34 %, water vapor transmission rate 3.60x10-6 gr/cm2/24 hour, brightness 65.15 and thickness 0.045 mm. The antibacterial activity test on tilapia fish fillet showed that edible film could not protect tilapia fish fillet as specified in SNI 7388:2009
