Abstract

Jawa Timur merupakan daerah yang mengembangkan komoditas apel dimana sentra produksinya di Kota Batu dan Kecamatan Poncokusumo, Kabupaten Malang. Berdasarkan data BPS dan Bapeda Kota Batu 2010, produksi apel Kota Batu berkisar antara 172.489 kwintal (2002) hingga 2.097.514 kwintal (2006). Untuk meningkatkan nilai tambah buah apel Batu, sejak tahun 2002 dikembangkan industri pengolahan apel, seperti minuman sari apel, kripik apel, cuka apel, jenang apel, dan tonik apel (sejenis cuka apel). CV. Segar Buah Hutama adalah salah satu usaha produksi minuman sari buah bermerk Dewata. Penilaian pengendalian mutu minuman sari apel Dewata belum ada acuan pasti yaitu perkiraan yang bersifat subjektif, sehingga menyebabkan inkonsistensi mutu. Pengendalian mutu merupakan alat bagi manajemen untuk memperbaiki dan mempertahankan mutu produk yang sudah tinggi, sehingga mengurangi produk rusak. Tujuan penelitian ini adalah menentukan keterkaitan kinerja mutu terhadap penerimaan konsumen dan loyalitas konsumen. Penentuan sampel penelitian ini dengan metode Purposive Sampling yaitu pemilihan sampel berdasarkan pada karakteristik tertentu yang dianggap mempunyai hubungan dengan karakteristik populasi yang sudah diketahui sebelumnya. Jumlah responden sebanyak 30 orang. Pengukuran evaluasi kinerja mutu minuman sari apel terhadap penerimaan konsumen menggunakan metode GSCA (Generalized Structured Component Analysis). Hipotesis penelitian ini yaitu keterkaitan kinerja mutu intrinsik dengan penerimaan konsumen, keterkaitan kinerja mutu ekstrinsik dengan penerimaan konsumen, keterkaitan kinerja mutu ekstrinsik dengan loyalitas konsumen, dan ii keterkaitan penerimaan konsumen dengan loyalitas konsumen. Keterkaitan kinerja mutu ekstrinsik dengan penerimaan konsumen memiliki pengaruh positif dan signifikan. Hal ini mengindikasikan konsumen menjadikan faktor indikator mutu ekstrinsik sebagai petunjuk penerimaan produk. Responden lebih mudah menganalisa mutu ekstrinsik yang terdiri dari indikator merek, kemasan dan kemudahan mendapatkan sebagai evaluasi penerimaan konsumen. Mutu ekstrinsik penting untuk ditonjolkan sehingga dapat memperkuat penerimaan konsumen sari apel.

English Abstract

Jawa Timur is well known with its apples since they’ve became regional commodities in which the central productions are located in Batu and Poncokusumo, Malang. Based on BPD and Bapeda of Batu in 2010, the productions of apples were about 172.489 quintals (2002) up to 2.097.514 quintals (2006), so since Batu has been producing a great numbers of apples, the apples processing industries also have been developing since 2002. The outcome from the industries are apple cider, apple vinegar, apple jenang (made from sticky rice, flour and sugar), and apple tonic (similar with apple vinegar). CV. Segar Buah Utama is one of beverage industries which produces fruit cider with its brand, Dewata. There is no certain guide yet to assess Dewata apple cider quality control so they still use subjective estimation therefore it can cause quality’s inconsistency. Quality control is a tool for management to fix product quality, to maintain product quality to be consistent, and to reduce the amount of product damage. The aims of this study are to determine the relationship between quality performances with consumers’ acceptance, to determine the relationship between quality performances with consumers’ loyalty and consumers’ loyalty. The determination of the study sample used Purposive Sampling method which is the selection of sample based on certain characteristics of which considered to have a relationship with the characteristics of a population that have been known before. Total of respondent in this study was 30 people. Performance evaluation measurement of apple’s cider quality toward the effectiveness of the acceptance of consumers used GSCA (Generalized Structured Component Analysis) method. iv Hypothesis of this study which are the relationship between intrinsic quality performances with consumers’ acceptance, the relationship between intrinsic quality performances with consumers’ loyalty, the relationship between extrinsic quality performances with consumers’ acceptance, the relationship between extrinsic quality performances with consumers’ loyalty and the relationship between consumers’ acceptance with consumers’ loyalty are accepted because they have positive effects. The relationship between extrinsic quality performances with consumers’ acceptance has positive effects and significance. It indicates that consumers are the factor of extrinsic quality as indication of product acceptance. Respondents are easier to analyze as indication of product acceptance. They are also find it easier to analyze extrinsic quality which contains of brand indicator, packaging, and ease to get the evaluation of consumers’ acceptance. Extrinsic quality is important to be pointed out to strengthen the consumers’ acceptance in apple cider products.
