Abstract
Beras adalah bahan makanan pokok yang dikonsumsi hampir 90% penduduk Indonesia. Setiap tahunnya konsumsi beras nasional semakin meningkat. Hal ini disebabkan pertumbuhan penduduk yang tidak dapat dikendalikan dengan baik. Untuk mengatasi hal ini, maka diciptakanlah beras analog. Beras analog adalah salah satu bentuk diversifikasi makanan pokok yang diolah dari bahan baku berbasis karbohidrat dengan penambahan zat-zat tertentu untuk memperbaiki kualitas makanan pokok. Tujuan penelitian ini adalah menganalisis kelayakan teknis, finansial, dan faktor pendukung pendirian usaha beras analog berbahan gembili, gadung, dan garut, untuk menganalisis layak atau tidaknya pembangunan usaha beras analog berskala IKM dan memberikan saran untuk pendirian usaha produksi beras analog berbasis umbi gembili, umbi garut, dan umbi gadung. Penelitian ini dilakukan di sekitar Malang raya. Analisis yang digunakan adalah analisis teknis, finansial, dan faktor pendukung. Pada analisis teknis yang terdiri dari analisis bahan baku dan bahan pendukung, pemilihan lokasi usaha, proses produksi, kapasitas produksi, pemilihan mesin dan peralatan, utilitas, dan kebutuhan tenaga kerja dinyatakan layak. Pada analisis finansial pada skripsi ini dibagi menjadi dua yaitu perhitungan analisis finansial untuk umbi gembili dan garut, serta perhitungan analisis finansial untuk umbi gadung. Pada perhitungan, didapat bahwa biaya tetap per harinya adalah Rp. 38.550,00. Sedangakan biaya tidak tetap pada umbi gembili dan garut per harinya adalah Rp. 3.034.200. Biaya tidak tetap pada umbi gadung yaitu Rp. 2.614.200,00. Harga jual beras analog berbahan gembili dan garut adalah Rp 6.500,00 untuk kemasan 325 gram dan Rp. 20.000,00 untuk kemasan 1 Kg. Harga jual beras analog berbahan gadung adalah Rp 6.000,00 untuk kemasan 325 gram dan Rp. 17.500,00 untuk kemasan 1 Kg. Pada perhitungan BEP untuk umbi gembili dan garut didapat hasil bahwa BEP dalam unit adalah 25 kemasan untuk kemasan 325 gram dan 8 kemasan untuk kemasan 1 Kg. Pada perhitungan BEP untuk umbi gadung didapat hasil bahwa BEP dalam unit adalah 22 kemasan untuk kemasan 325 gram dan 9 kemasan untuk kemasan 1 Kg. Keuntungan per hari yang didapat untuk umbi berbahan gembili dan garut adalah Rp. 924.750,00 untuk kemasan 325 gram, dan Rp. 927.250,00 untuk kemasan 1 Kg. Keuntungan per hari yang didapat untuk umbi berbahan gembili dan garut adalah Rp. 617.250,00 untuk kemasan 325 gram, dan Rp. 427.250,00 untuk kemasan 1 Kg. Kriteria investasi berdasarkan R/C Ratio, NPV, IRR, dan PP dan berdasarkan kriteria lainnya dapat dikatakan layak secara finansial. Dari hasil analisis faktor pendukung, didapat bahwa berbagai pihak yang telah diwawancari sepenuhnya mendukung adanya pengembangan produk beras analog.
English Abstract
Rice is the staple food consumed almost 90 % of the Indonesian citizens. Every year national rice consumption is increasing. This is due to population growth that cannot be controlled with good. To settle the matter, then was built by rice analogous. Analogous rice is one of a diversification staple food that is prepared from raw materials based carbohydrates by the addition of certain substances to increase the quality of a staple food. The purpose of this research is analyzing technical and feasibility financial and factors a supporter of the fact of creating companies made rice analogous gembili, gadung, and garut to analyze feasibility business development of analogous rice by IKM scale and give advice to the fact of creating companies domestic rice production analogous based tubers gembili, tubers garut and tubers gadung. The study is done around Malang. The analysis used is technical analysis financial and factors supporter. On technical analysis consisting of analysis of raw material and material supporter, the election of the location of business the process of production of production capacity election machines and equipment, utility, and the needs of labor announced eligible. On financial analysis on a thesis is divided into two of the calculation of financial analysis to tuber gembili and garut as well as calculations of financial analysis to tuber gadung. On calculations, obtainable that fixed costs per day are Rp. 38.550,00. Meanwhile cost not fixed on tubers and garut gembili each day are Rp. 3.034.200. The cost of not fixed on tubers gadung is Rp. 2.614.200,00. The selling price of rice made gembili analogous and garut is Rp 6.500,00 for packing 325 grams and Rp.20.000,00 for packing 1 kg. The selling price of rice made analogous gadung is Rp 6.000,00 for packing 325 grams and Rp.17.500,00 for packing 1 kilos. On calculations of uses for tubers and garut gembili obtained the results of that uses in the unit is 25 packing for packing 325 grams and 8 packaging for packing 1 kg. On calculations of uses for tubers gadung obtained the results of that uses in the unit is 22 packaging for packing 325 grams 9 packaging and packaging 1 kg. Profit each day was made for tubers and garut gembili is Rp. 924.750,00 for packing 325 grams, and Rp. 927.250,00 for packing 1 kg. Profit per day was made for tubers and garut gembili is Rp. 617.250,00 for packing 325 grams, and Rp. 427.250,00 for packing 1 kg. Investment criteria based on R/C Ratio, NPV, IRR, and government regulation and based on the other criteria can be said to be worthy of financially. The result of factor analysis of supporters, obtained that the various parties already interviewed fully support the development of analog rice products.
