Abstract
Makanan merupakan kebutuhan mendasar bagi hidup manusia. Makanan yang dikonsumsi beragam jenis dengan berbagai cara pengolahannya. Salah satu tempat pengolahan makanan adalah restoran. Restoran dengan konsep Cina yang terdapat di kota Malang adalah House Of Wok Araya. Masalah yang sering muncul di restoran House Of Wok adalah adanya komplain terhadap sanitasi makanan. Dalam mengatasi komplain tersebut, restoran House Of Wok akan mengganti makanan yang dikomplain atau memberikan diskon. Hal ini menyebabkan restoran mengalami kerugian biaya, waktu dan tenaga. Tujuan pada penelitian ini yaitu mengetahui pelaksanaan sanitasi makanan serta peran peran karyawan dalam sanitasi makanan di restoran House Of Wok Araya Malang. Metode yang digunakan pada penelitian ini yaitu Six Sigma dibatasi pada tahap define, measure dan analyze. Tempat penelitian di Jalan Belimbing Indah Megah 2 Plaza Araya. Data penelitian diperoleh dari komplain pelanggan terhadap sanitasi makanan pada bulan Juni-Septemeber 2014. Jumlah komplain yang diambil sebagai sampel sebanyak 120 komplain. Berdasarkan hasil penelitian, diketahui komplain terbanyak adalah adanya benda asing pada makanan. Dari hasil perhitungan nilai kapabilitas sigma untuk proses sanitasi makanan sebesar 2,18 sigma dan nilai Final Yield sebesar 74,17%. Terdapat 3 faktor yang menyebabkan komplain adanya benda asing pada makanan yaitu keahlian karyawan masih minim, teknologi proses belum memenuhi SOP dan kurangnya pengetahuan karyawan terhadap sanitasi makanan. Dari hasil perhitungan FMEA, yang menjadi prioritas utama untuk segera dilakukan perbaikan adalah faktor karyawan kurang teliti. Saran yang dapat diberikan adalah memperketat pengawasan atau kontrol.
English Abstract
Food is a primary need of people’s life. The consumed food has various kinds with various way of cooking. One of food preparing places is restaurant. The restaurant with Chinese concept which is placed in Malang city is House of Work Araya. The problem which is often in House of Work restaurant is a complaint of food sanitation. To solve that complaint, House of Work restaurant replaces the complained food with the new one or gives a discount for the food. It causes the restaurant to get loss of finance, time, and energy. The method of this research is six sigma limited on several stages: define, measure, and analyze. The location of the research is on Belimbing Indah Megah 2 Plaza Araya Street. The research was done in year 2014 starting from June to September. The data were obtained from the complaints of customers regarding to food sanitation from which researcher took 120 complaints as samples. According to the research, most complaints were statements that there was unknown object(s) within the food. The calculation of sigma capability value in the process of food sanitation generated 2.18 sigma and 74.17% of final yield value. There were three factors causing the complaints about the unknown object(s) within the food, those were the low level of staffs’ professionalism, processing technology which had not met SOP standard, and the low level of staffs’ knowledge about food sanitation. Based on FMEA calculation, fixing the thoroughness level of restaurant staffs became the top priority. The suggestion which can be given is giving strict guidance or control.
