Abstract

Gula merah tebu dihasilkan dari proses pengentalan nira tebu dengan cara pemanasan. Pemanasan ini penting karena dapat menentukan kualitas dari gula merah. Pembuatan gula merah secara tradisional memiliki kelemahan dalam proses pemanasan, sehingga menghasilkan kualitas gula merah yang tidak baik. Evaporator vakum double jacket tipe water jet adalah mesin yang mampu membuat gula merah yang lebih baik di banding pengolahan secara tradisional. Pengoperasinya evaporator vakum membutuhkan energi untuk menghasikan panas. Sehingga diperlukan evaluasi terhadap performansi atau kinerja mesin evaporator vakum double jacket tipe water jet. Hasil penelitian menunjukan antara lain nilai kebutuhan energi panas terbesar evaporator didapatkan pada suhu 600C yaitu sebesar 11.597,04 kJ dan yang terendah pada suhu 700C sebesar 7.190,82 kJ. Rerata Kebutuhan energi listrik terbesar di dapatkan pada suhu 600 C sebesar 11.140,00 kJ. Efesiensi energi terbesar di dapatkan pada suhu 700C sebesar 74,94 % d. Berdasarkan penelitian ini dapat disimpulkan bahwa perlakuaan perbedaan suhu pada proses penguapan nira tebu hingga menjadi gula merah berpengaruh pada sifat fisik dan lama waktu pemasakan serta massa gula merah yang dihasilkan. Sedangkan berdasarkan nilai efesiensi yang diperoleh, mesin Evaporator double jacket tipe water jet ini sudah cukup layak untuk proses pengentalan nira tebu.

English Abstract

Cane brown sugar was produced by thickening thewater of sugarcane by way of warming up so that the moisture content in the molasses can be evaporated. This warming is important because it determines the quality of the brown sugar. Making brown sugar traditionally has its disadvantages in the process of heating, resulting in quality of brown sugar which is not good. Water jet vacuum evaporator with double jacket system is a machine capable of making brown sugar which is better in processing appeals traditionally. The processing water jet vacuum evaporator with double jacket system requires energy to produce heat. So the necessary evaluation of performance or engine performance evaporator vacuum double jacket type water jet.The results of research shows among others, the value of energy needs heat largest evaporator obtained at a temperature of 600C that is equal11.597,04 kJ andthe lowest at the temperature 700C that is equal 7.190,82 kJ. AverageLargest electrical energy needs in get at the temperature of 600C that is equal 11.140,00 kJ . For energy biggest in get at the temperature of 700C that is equal 74,94 %. Based on this research can be concluded that treatment differences of temperature to the process evaporation water of sugar cane up to be brown sugar matter to the physical properties and old time cooking and heavy mass brown sugar produced. While based on value efesiensi obtained, machine evaporator double jacket type water jet this is quite feasible to the process of thickening thewater of sugar cane
