Abstract

Daun sirih merah (piper crocatum) adalah salah satu bahan alami yang mempunyai kemampuan sebagai antimikroba. Daun sirih dapat digunakan sebagai antmikroba karena mengandung 4,2% minyak atsiri yang sebagian besar terdiri dari betephenol yang merupakan isomer Euganol allypyrocatechine, Cineol methil euganol, Caryophyllen (siskuiterpen), kavikol, kavibekol, estragol dan terpinen. Cara yang dilakukan untuk membuat pengawet alami berbahan tanaman sirih merah adalah dengan mengekstrak daun sirih merah menggunakan metode Microwave Asissted Extraction (MAE). Tujuan dari penelitian ini adalah untuk mengetahui pengaruh konsentrasi dan lama perendaman minyak atsiri daun sirih merah terhadap warna, aroma, tekstur, pH, kadar air serta total mikroba ikan teri. Hasil terbaik diperoleh pada pada konsentrasi minyak atsiri daun sirih merah 1.0% dan waktu perendaman 10 menit, dengan tingkat kesukaan terhadap iv warna sebesar 2,75, aroma sebesar 2.75, tekstur

English Abstract

Piper crocatum is one of natural ingredients that have the ability as an antimicrobial. Piper crocatum can be used as an antimicrobial for contains 4.2% essential oil consisting mostly of betephenol which is isomer Euganol allypyrocatechine, Cineol methil euganol, Caryophyllen (siskuiterpen), kavikol, kavibekol, estragol dan terpinen. Methode to create a natural presertative for piper crocatum with Microwave Assisted Extraction (MAE) methode. The purpose of this research was to determine the effect of concentration and immersion time the piper crocatum essential oil for colour, aroma, texture, pH, water contents and total microbial of stolephorus indicus. The best results were obtained of concentration 1.0% and immersion time 10 minute, vi with score of colour 2.75, aroma 2.75,texture 2.4, pH 7.3, water contents 52,20% and total microbial 3,8x106 CFU/
