Abstract
Gembili (Dioscorea esculenta) is an alternative staple food beside rice where is consumed by people in village when dry season. Beside as staple food, gembili also is used as traditional medicine. Dioscorea esculenta is content water soluble polysaccharide that can reduce lipid and cholesterol blood, nevertheless arising problem is high contents of non water soluble polysaccharide fraction (starch, proteins, crude fiber), it had to be separated for getting water soluble polysaccharide components. This research uses stamp mill to get gembili flour with high water soluble polysaccharide and low non water soluble polysaccharide. However have not yet known the influences of pounder weight and pounding time to gembili flour characters produced, especially its water soluble polysaccharide contents. With combination of that both factors, it is expected to know the pounder weight and pounding time on stamp mill that can produce gembili flour with high water soluble polysaccharide contents. The aim of this research is to know the pounder weight and pounding time on stamp mill to obtain gembili flour with high water soluble polysaccharide contents and to know the gembili flour characteristic as the result of flouring uses stamp mill. This research uses Randomized Block Design with 2 factors. Factor I consists of 2 levels of pounder weight (5 kg and 7 kg). Whereas factor II consists of 3 levels of pounding time (60 minutes, 90 minutes, 120 minutes). Each treatment combination is repeated 3 times. The data is analysed by Analysis of Variance (ANNOVA) and BNT test 5%. Nevertheless if happened interaction, it will be continued by DMRT test 5%. The best treatment was choosen using Multiple Atribute Method (Zeleny, 1982). The research results indicate that treatments of pounder weight (5 kg and 7 kg) have a real effect ( =0,05) to the level of starch, water soluble polysaccharide, crude proteins, crude fiber, viscosity, rendement and L*. Later, the pounding time treatments (60 minutes, 90 minutes, 120 minutes) show a real influence ( =0,05) to the level of water content, starch, water soluble polysaccharide, crude proteins, crude fiber, viscosity, rendement, L* and yellowness ( b*). Whereas interaction between the two treatments show a real influence ( =0,05) to the level of starch, water soluble polysaccharide, crude proteins, crude fiber, rendement and L*. The best treatment is obtained from treatment of stamp mill pounding with 5 kg pounder weight and 90 minutes pounding time. The compositions were water content 8,01 %, water soluble polysaccharide 13, 77 %, starch 58,73 %, crude proteins 5,37 %, crude fiber 6,13 %, viscosity 0,096 cps, (L*) 68,0, (a*) 16,37, (b*) 16,23, rendement 15,35 %. Whereas the result of analysis water soluble polysaccharide extract from the best treatment of gembili flour, the compositions were water content 9,20 %, starch 0,79 %, crude proteins 1,17 %, crude fiber 1,13 %, viskosity 0,109 cps.
