Abstract

Pelilinan merupakan suatu proses pemberian lapisan pada permukaan produk dengan menggunakan lilin. Pelapisan lilin terhadap Jeruk Pontianak berfungsi sebagai lapisan pelindung terhadap hilangnya air. Jeruk Pontianak (Citrus suhuiensis (Tan.)) merupakan jenis buah yang dapat disimpan selama 7 hari pada suhu ruang tetapi terjadi pengerutan setelah 3 hari. Tujuan penelitian ini adalah memperoleh perlakuan terbaik dalam pelilinan jeruk pontianak untuk memperpanjang masa simpan dan memperbaiki kenampakan, juga untuk mendapatkan informasi mengenai proses pelilinan jeruk pontianak yang layak teknis dan finansial Penelitian dilakukan di Laboratorium Rekayasa Proses dan Sistem Produksi Jurusan Teknologi Industri Pertanian Fakultas Teknologi Pertanian Universitas Brawijaya Malang pada bulan Desember 2007. Metode penelitian menggunakan Rancangan Acak Kelompok (RAK) faktor tunggal. Faktor yang digunakan adalah konsentrasi emulsi lilin yaitu konsensentrasi 4%, 5%, 6%, 7%, 8%, dan 9%. Perlakuan diulangi 3 kali sehingga diperoleh 18 satuan percobaan. Data dianalisa dengan ANOVA dan uji BNT. Uji organoleptik menggunakan uji Friedman. Penentuan perlakuan terbaik dengan menggunakan metode multiple attribute Hasil penelitian setelah 12 hari diperoleh hasil uji organoleptik, kenampakan terbaik terjadi pada konsentrasi lilin 9% dan rasa yang disukai terdapat pada konsentrasi lilin 4%. Hasil keseluruhan diperoleh perlakuan terbaik terjadi pada perlakuan dengan konsentrasi emulsi lilin 7% dengan rerata susut berat yang terjadi adalah sebesar 4,494 gram (3,32%). Hasil uji kimia, rerata vitamin C adalah sebesar 39,085 mg/100 gram. Pada analisa total asam, rerata kandungan total asam pada konsentrasi 7% sebesar 0,296% dan rerata total gula sebesar 1,03%. Hasil perhitungan, dengan kapasitas produksi perharinya 160 kg, modal tetap yang dibutuhkan adalah sebesar Rp.18.758.000 dan total biaya pertahunya sebesar Rp. 677.862.487 maka diperoleh HPP sebesar Rp.14.122,14,-/kg dengan harga jual Rp. 20.399,17,-/kg. Titik impas dari produksi jeruk pontianak berlapis lilin adalah sebanyak 3110,04 kg atau sebesar Rp. 20.874.336,83,-. Industri ini dikatakan tidak layak secara finansial sebab harga pasarannya untuk produk yang sejenis lebih rendah dari nilai HPP produk jeruk pontianak berlapis lilin yaitu Rp.4500-5000.,-

English Abstract

Waxing is a process of giving cover at the product surface with using wax. Wax covering on pontianak orange is used as protection cover against water lost. Pontianak orange (Citrus suhuiensis (Tan» is kind of fruit that can be stored for 7 days at room temperature but after 3 days will happen furrowing. The purpose of this research are to get the best treatment from pontianak orange waxing to lengthern preserve period, fixing outer performance, and also to get information of orange waxing process that proper according to technical and financial side. Research is held in Manipulation Process and Production System Laboratory of Agriculture Industry Technology, Agriculture Technology Faculty, Brawijaya University, Malang at December 2007. Research method use Rancangan Acak Kelompok (RAK) single factor. Factor that use is wax emulsion concentration which is concentration 4%, 5%, 6%, 7%, 8%, and 9%. Treatment repeats 3 times so we get 18 units experiment. Data was analyzed with using ANOV A and BNT test. Organoleptic test use Friedman test. The best treatment fixation using multiple attribute method. Research issue after 12 days getting organoleptic test issue, the best outer performance happened at wax concentration 4%. Overall issue get the best treatment happen at treatment with wax emulsion concentration 7 % with weight lost average that happen as much as 4.494 gram (3.32%). Chemical test result, vitamin C average is 39.085 mg/1 00 gram. At total acid analyze, acid total contents average at concentration 7% as much as 0.296% and total sugar average as much as 1.03%. Calculation result, with production capacity each day is 160 kg, permanent capital that need is Rp. 18 758 000 and total cost each year as much as Rp. 677 862487 so getting HPP value as much as Rp. 14 122. 14/kg with selling price Rp. 20 399.17/kg. Break even point from pontianak orange cover with wax is 3110.04 kg or as much as Rp. 20 874 336.83. This industry is saying not proper by financial side because the marketing price for similar product is lower than HPP value product pontianak orange cover with wax which is Rp. 4500-5000
