Abstract
Pemerintah melalui Badan Pengawas Obat dan Makanan (BPOM) pada tahun 2012 menetapkan Cara Produksi Pangan yang Baik Untuk Industri Rumah Tangga (CPPB-IRT). CPPB-IRT merupakan pedoman yang berisi persyaratan-persyaratan pada setiap ruang lingkup/aspek yang wajib dipenuhi oleh produsen pangan olahan industri rumah tangga untuk menghasilkan pangan olahan yang bermutu, aman, dan layak dikonsumsi. CPPB-IRT memiliki 14 aspek. Perusahaan Roti X merupakan perusahaan industri rumah tangga dan saat ini belum menerapkan sistem CPPB-IRT. Oleh karena itu perlu adanya identifikasi kondisi CPPB-IRT disana. Berdasarkan analisa ketidaksesuaian dengan elemen peryaratan CPPB-IRT dan berdasarkan hasil identifikasi yang masuk dalam kategori minor, mayor, serius, dan kritikal terdapat 11 aspek, lokasi dan lingkungan produksi, bangunan dan fasilitas, peralatan produksi, fasilitas dan kegiatan higienis dan sanitasi, kesehatan dan higienis karyawan, pemeliharaan dan program higienis dan sanitasi, penyimpanan, pengendalian proses, pengawasan oleh penanggung jawab, pencatatan dan dokumentasi, dan pelatihan karyawan. Berdasarkan hasil analisa ditemukan 3 sub aspek dari 2 aspek yang masuk dalam kategori serius dan 9 sub aspek dari 5 aspek yang masuk dalam kategori kritikal. Terhadap kategori serius dan kritikal dengan didapatkan permasalahan-permasalahan utama yaitu permasalahan toilet, permasalahan karyawan yang sakit, permasalahan wastafel (tempat cuci tangan), permasalahan tempat sampah, permasalahan peralatan, dan permasalahan kebiasaan karyawan. Semua permasalahan tersebut didapatkan masing-masing penyebabnya dengan menggunakan Root Cause Analysis (RCA). Usulan perbaikan yang diberikan terhadap masing-masing permasalahan tersebut diantaranya adalah perbaikan Tata Letak Fasilitas dengan menggunakan metode Systematic Layout Planning (SLP), pelatihan, pembuatan Peraturan Rutin Karyawan Produksi dan Standard Operating Procedure Kebersihan di Area Produksi, penghapusan karat rak roti tawar matang dan pelapisan permukaan rak dengan cat. Setelah dilakukan upaya –upaya perbaikan yang memperhatikan faktor keamanan pangan, kontaminasi pada produk olahan roti dapat diminimalisir.
English Abstract
The government, through Badan Pengawas Obat dan Makanan (BPOM), in 2012, has established Cara Pengelolaan Pangan Yang Baik Untuk Industri Rumah Tangga (CPPB-IRT). Indeed, CPPB-IRT is a manual containing requirements in every space or aspect that must be obeyed by the producer of home-based processed food industry in order to produce processed food that is qualified, secured and reliable to consume. CPPB-IRT have 14 aspects. Bread Company X is home-based industry and it is not yet applying CPPB-IRT system. Therefore, CPPB-IRT condition must be identified. Based on the analysis of Incompliance against the elements of CPPB-IRT requirements, and pursuant to the result of identification into minor, mayor, serious and critical categories, then 11 aspects are found, location and production area, building and facility, production equipment, facilities and hygiene activity and sanitation, healty and higiene of employee, maintenance of hygiene and sanitation, storage, process control, ponsibility of supervisor, note and documentation, and training of employee. The result of analysis found 3 sub aspect from 2 aspect include serious categories and 9 sub aspect from 5 aspect include critical categories. Based on the result of analysis over serious and critical categories, main problems are observed such as problems of toilet problem, sick leave by employee, wash basin, garbage can, equipment and employee habit. Each cause of every problem is found using Root Cause Analysis (RCA). The proposal solution to each problem include the improvement of facility site using Systematic Layout Planning (SLP) method, the training, the regulation for production employee and the Standard Operating Procedure for Cleanliness in production area, the elimination of corrosive in baked bread shelf, and the coating of shelf with paint. The improvement steps must consider food security factor such that the contamination to processed bread product can be minimized.
