Abstract
Kualitas merupakan salah satu aspek penting dalam penampilan perusahaan, karena kualitas akan menjadi tolak ukur kepuasan konsumen terhadap produk yang ditawarkan perusahaan. Akan tetapi, dari produksi baglog jamur tiram putih CV. Agaricus Sido Makmur Sentosa, terdapat baglog jamur yang rusak seperti baglog kontaminasi dan tidak tumbuh tudung. Berdasarkan permasalahan tersebut, masalah umum dari penelitian ini yaitu “Bagaimanakah pengendalian kualitas baglog jamur tiram putih yang dilaksanakan oleh perusahaan dan faktor-faktor apa saja yang menjadi penyebab baglog kurang berkualitas”. Penelitian ini bertujuan untuk: 1) Mendeskripsikan pelaksanaan pengendalian kualitas produksi baglog jamur tiram putih, 2) Menganalisis pengendalian kualitas baglog jamur tiram putih pada proses produksi jamur tiram putih, dan 3) Menganalisis faktor-faktor yang menyebabkan baglog jamur tiram putih tidak berkualitas pada CV. Agaricus Sido Makmur Sentosa. Penelitian ini dilakukan di CV. Agaricus Sido Makmur Sentosa Kecamatan Lawang Kabupaten Malang. Penentuan responden untuk mendapatkan data yang dikehendaki menggunakan metode purposive, yaitu manajer budidaya jamur tiram dan 3 tenaga kerja di bagian proses produksi. Metode analisis data yang digunakan dalam penelitian ini adalah analisis deskriptif untuk menjawab tujuan pertama, pengendalian kualitas dengan pendekatan six sigma untuk menjawab tujuan kedua dan diagram sebab-akibat untuk menjawab tujuan ketiga. Hasil dari tujuan pertama yaitu diketahui bahwa pelaksanaan pengendalian kualitas produksi baglog jamur tiram putih pada CV. Agaricus Sido Makmur Sentosa sudah mencapai 90% proses produksi sesuai dengan standar opersional prosedur (SOP) yang telah ditetapkan oleh perusahaan. Hasil tujuan kedua yaitu produksi baglog jamur tiram putih masih berada pada batas toleransi kerusakan untuk persaingan lokal. Sedangkan proses yang mengalami penyimpangan terbesar yakni proses inokulasi dengan dua masalah kerusakan yang terjadi yaitu kontaminasi dan kerusakan akibat serangan hama. Sedangkan hasil dari tujuan ketiga yaitu faktor penyebab baglog jamur tiram putih tidak berkualitas diantaranya adalah bibit yang digunakan kurang berkualitas, serbuk kayu yang masih mengandung getah dan pelumas gergaji kayu yang berasal dari oli dan solar, kebersihan ruang inkubasi kurang terjaga, sirkulasi udara tiap baglog kurang baik, terdapat serangan hama, penataan baglog yang terlalu rapat, proses inokulasi yang kurang sempurna, alat produksi ada yang rusak, kurangnya perhatian dan pengawasan kepada tenaga kerja dalam bekerja. Berdasarkan hasil dan kesimpulan penelitian, saran yang dapat diberikan berkaitan dengan hasil penelitian pada baglog jamur tiram putih di CV. Agaricus Sido Makmur Sentosa adalah perlu melakukan peningkatan pengawasan dan pengecekan ulang terhadap peralatan dan bahan baku yang digunakan. Perusahaan juga perlu melakukan pelatihan dan seminar khusus untuk tenaga kerja, dan perusahaan agar lebih memperjelas sistem perjanjian dengan mitra kerja.
English Abstract
Quality is one of the important aspects in the appearance of the company, because quality will be a benchmark for customer satisfaction with the products offered by the company. But, the white oyster mushroom baglogs production of CV. Agaricus Sido Makmur Sentosa, there were damaged mushrooms baglog such as baglog contamination and no hood. Based on these problems, the general problem of this research is "How is the quality control of white oyster mushrooms baglog carried out by the company and what factors cause the lack of quality". This research purposes to: 1) Describe the quality control implementation of white oyster mushrooms baglog production, 2) Analyze the quality control of white oyster mushrooms baglog in the production process of white oyster mushrooms, and 3) Analyze the factors that cause unqualified white oyster mushrooms baglog in CV . Agaricus Sido Makmur Sentosa. This research was conducted at CV. Agaricus Sido Makmur Sentosa Lawang District, Malang Regency. Determination of respondents to obtain the desired data using purposive methods, those were oyster mushroom cultivation manager and 3 workers in the production process. The data analysis method used in this research were descriptive analysis that can answer the first goal, quality control with a six sigma approach that is able to answer the second goal, and a causal diagram is in order to answer the third goal. The result of the first goal is to know that the quality control of white oyster mushroom baglog production in the CV. Agaricus Sido Makmur Sentosa has reached 90% of the production process in accordance with the operational procedure standard (SOP) set by the company. The second goal is the production of white oyster mushroom baglog still at the damage tolerance limit for local competition. While the process that experiences the biggest deviation is the process of inoculation with two problems of damage that occur, contamination and damage due to pest attack. The results of the third goal is to know the factors that cause unqualified white oyster mushrooms baglog such as the use of less quality seeds, sawdust that still contains sap and lubricants of wood saws derived from oil and diesel, poor maintained incubation space, less air circulation per baglog, pest attack, baglog arrangement that is too tight, the process of inoculation is not perfect, the damaged production equipment, lack of attention and supervision of the workforce at work. Based on the results and conclusions of the study, suggestions that can be given relate to the results of research on white oyster mushrooms baglog in the CV. Agaricus Sido Makmur Sentosa is required to increase supervision and re-check equipment and raw materials used. The company also needs to conduct special training and seminars for the workforce, and the company should further clarify the system of agreements with work partners.
