Abstract
Rendahnya konsumsi buah dan sayur telah menjadi isu global dan terjadi di Indonesia. Kecukupan konsumsi sayur dan buah yang dianjurkan berdasarkan Pedoman Umum Gizi Seimbang 2014, yaitu minimal 5 porsi sehari dengan takaran setara 500 gram setiap hari. Namun, berdasarkan survey Riset Kesehatan Dasar tahun 2013 menemukan bahwa 90% penduduk Indonesia mengkonsumsi buah dan sayur di bawah anjuran. Mahasiswa yang termasuk ke dalam kelompok umur dewasa dengan tingkat konsumsi buah dan sayur yang rendah. Tujuan dari penelitian ini yaitu menganalisis perilaku konsumsi buah dan sayur mahasiswa dengan mengaplikasikan Theory of Planned Behavior (TPB). Penelitian ini dilakukan pada bulan April sampai Mei 2018 dengan cara menyebarkan kuesioner online pada mahasiswa Fakultas Pertanian Universitas Brawijaya yang berusia 19-25 tahun dan sedang kos di Malang. Teknik analisis data yang digunakan yaitu Structural Equation Modelling-Parsial Least Square (SEM-PLS) dengan menggunakan program WarpPLS 5.0 dengan 100 responden. Hasil yang ditemukan adalah sikap, norma subjektif , dan kendali perilaku dalam mengkonsumsi sayur dan buah berpengaruh positif terhadap niat konsumsi buah dan sayur. Nilai R2 variabel sikap, norma subjektif , dan kendali perilaku terhadap niat adalah 0,63. Nilai R-Square niat sebesar 0,63 menunjukkan model kuat dapat diinterpretasikan bahwa variabel konstruk niat dapat dijelaskan oleh variabel konstruk sikap, norma subjektif, dan kendali perilaku sebesar 62,7%. Sedangkan sisanya 37,3% dijelaskan oleh variabel lain diluar yang diteliti. Sikap merupakan prediktor utama dari niat, diikuti oleh kendali perilaku, dan norma subyektif. Niat konsumsi dan kendali perilaku ditemukan berpengaruh langsung terhadap perilaku konsumsi buah dan sayur dengan nilai R2 sebesar 0,55 . Nilai R-Square perilaku sebesar 0,549 menunjukkan model kuat dapat diinterpretasikan bahwa variabel konstruk perilaku dapat dijelaskan oleh variabel konstruk niat dan kendali perilaku sebesar 54,9%. Sedangkan sisanya 45,1% dijelaskan oleh variabel lain diluar yang diteliti. Kendali perilaku merupakan predictor utama langsung perilaku, kemudian diikuti oleh niat. Berdasarkan hasil yang diperoleh, ada beberapa saran yang dapat diberikan. Pertama, peningkatan sikap dapat dilakukan dengan cara memberi pengetahuan lebih lanjut mengenai manfaat konsumsi buah dan sayur secara rutin. Kendali perilaku dapat ditingkatkan dengan cara memberi kemudahan akses bagi mahasiswa untuk membeli buah dan sayur.
English Abstract
The low consumption of fruits and vegetables has become a global issue and occurs in Indonesia. Adequate consumption of vegetables and fruits recommended under the Pedoman Umun Gizi Seimbang 2014, which is at least 5 servings a day with a dose equivalent to 500 grams per day. However, based on the survey of Riset Kesehatan Dasar on 2013 found that 90% of Indonesians consume fruits and vegetables under advice. College students belonging to the age group of adults with low levels of fruit and vegetable consumption. The purpose of this study is to analyze the behavior of fruit and vegetable consumption of college students by applying Theory of Planned Behavior (TPB). This research was conducted from April to May 2018 by distributing online questionnaires to students of Faculty of Agriculture, Brawijaya University aged 19-25 years and being boarding in Malang. Data analysis techniques used are Structural Equation Modeling-Partial Least Square (SEM-PLS) using WarpPLS 5.0 program with 100 respondents. The results found are attitude, subjective norm, and behavioral control in consuming vegetables and fruits have a positive effect on the intention of fruit and vegetable consumption. The value of R2 of attitude variable, subjective norm, and behavioral control over intention is 0.63. The R-Square value of intention is 0.63 shows that the strong model can be interpreted that the intention construct variable can be explained by construct construct variables, subjective norms, and behavioral control by 62.7%. While the remaining 37.3% is explained by other variables outside the one studied. Attitudes are the main predictors of intention, followed by behavioral control, and subjective norms. Intention of consumption and behavioral control was found to directly affect the consumption behavior of fruits and vegetables with R2 value of 0,55. The R-Square value of behavior is 0.549 shows that the strong model can be interpreted that the behavioral construct variable can be explained by the construct and intention control variables of 54.9%. While the remaining 45.1% is explained by other variables outside the one studied. Behavioral control is the main direct predictor of behavior, followed by intention. Based on the results obtained, there are several suggestions that can be given. First, the improvement of attitude can be done by giving further knowledge about the benefits of consumption of fruits and vegetables on a regular basis. Behavioral control can be improved by providing easy access for students to buy fruit and vegetables so it is easier in consuming fruits and vegetables.
