Abstract

Analysis (IPA) method and Customer Satisfaction Index (CSI). The IPA method used to analyze the level of importance and attribute performance of Moringa leaf meatball by using Quadrant Analysis. Meanwhile, the CSI method used to determine the level of consumer satisfaction. The attribute products is such as taste, package sizes, aroma food, complaints handling, products availability, package design, products color, price, and expired date. Based on the research results calculation of compatibility between the performance of SMEs with the level of interest in frozen food products moringa leaf meatball is 87,3%. Meanwhile, the level of suitability attributes are classified into four quadrants. The first quadrant, the main priority to be repaired is complaints handling (0,36;0,46), products availability (0,38;048), and price (0,35;045). The second quadrant, the attribute achievement need to be preserved that are taste (0,43;0,49), aroma (0,40;0,45), and expired date (0,39;050). The third quadrant, the attribute has low priority, it is package sizes (0,36;038). The fourth quadrant, the excessive attributes according to the consumer that are package design (0,39;040) and product color (0,41;041). Meanwhile, the CSI analysis obtained calculations result by 69,41%. It means that the consumers are satisfied with the result of the performance of this SMEs with the range of scales 66?80%. Advice can be given in this study (1) improve the attributes are a top priority for repair include the handling of complaints by providing a dedicated phone consumers, the availability of products by encouraging farmers groups in Probolinggo for the simultaneous tree planting moringa and price attributes by lowering the initial price selling moringa leaf meatball from Rp. 15.000 to Rp. 12.000. (2) improve the performance of the product attributes moringa leaf meatball others such as add variety of packaging sizes, packaging design is more attractive, and the green color of the moringa leaf more highlighted. English Abstract

The rapid development of technology and information brings the impact on the life order of the World to consume healthy and nutritious food. It causes the rise of innovations of new products such as processed Moringa leaf. Frozen food is very useful for today. Based on the Office of the Chief Economist (2015), estimate that the average growth in year market packaged food and soft drinks in Indonesia during 2013-2017 will be above the middle class is expected to grow higher among canned/preserved food (16,7%), frozen processed food (16,6%), and noodles (13,5%). This proves that frozen food business opportunity is quite large with a percentage that is 16,6%. SMEs (Micro, Small and Medium-sized Enterprises) Kedai Kelor is a small industry with products processed Moringa leaves. These products include the production of SMEs Moringa leaf, capsules, frozen food (Moringa leaf meatball, spring rolls, nuggets and tempura), pudding, cereal, crackers and moringa leaf powder. Moringa leaf meatball is superior product of the SMEs by ???? ???? ??????????? ??? ???? ?????????? ???????? ??? ????????? ????? ???????? ????? meatball. However, some problems having in marketing moringa leaf meatball of which there are a competitor product, fishy of smelled, the price is still high which Rp. 15.000 by pack and the product is not yet available in the market because decrease many raw materials moringa. Therefore, it is necessary to study level of customer satisfaction by analyzing frozen food product attributes moringa leaf meatball. There are nine attributes analysis such as taste, package sizes, aroma food, complaint handling, products availability, package design, products color, price, and expired date.
