Abstract
Mengingat sifat-sifat produk pertanian yang memiliki karakteristik perishable atau mudah rusak, maka diperlukan adanya suatu strategi yang dapat mengubah produk pertanian menjadi lebih tahan lama dan memiliki nilai tambah yaitu dengan menjaga keterkaitan antara sektor pertanian dan sektor industri melalui agroindustri. Keterkaitan tersebut menjadi salah satu ciri dari Negara berkembang yang strukturnya mengalami transformasi dari ekonomi pertanian (agriculture) menuju industri pertanian (agroindustri). Wujud keterkaitan ini adalah sektor pertanian sebagai industri hulu yang memasok bahan baku dan sektor industri pertanian sebagai industri yang meningkatkan nilai tambah pada hasil pertanian menjadi produk yang kompetitif (Kusumawardani, 2009). Salah satu agroindustri yang telah mengolah komoditi pertanian menjadi produk olahan adalah agroindustri minuman sereal beras hitam organik. Kelurahan Cepokomulyo, Kecamatan Kepanjen, Kabupaten Malang merupakan salah satu sentra penghasil beras organik, salah satunya yaitu beras hitam organik. Kelurahan Cepokomulyo, Kecamatan Kepanjen, Kabupaten Malang terdapat 3 unit agroindustri minuman sereal beras hitam organik dimana 1 unit agroindustri skala kecil dan 2 unit agroindustri skala rumah tangga. Agroindustri minuman sereal beras hitam organik yang awal mulanya hanya dilakukan dalam skala kecil sekarang mengalami perkembangan sehingga muncul agroindustri baru namun masih dalam skala rumah tangga. Munculnya perkembangan agroindustri ini dikarenakan adanya penambahan nilai pada produk pertanian yang mengalami proses pengolahan yaitu nilai tambah. Penambahan nilai pada suatu produk ini akan meningkatkan nilai atau value komoditas pertanian yang diolah dan dapat mengambil keputusan dalam melakukan kegiatan produksi serta harga jual suatu produk sehingga akan meningkatkan keuntungan pengusaha yang melakukan pengolahan komoditas tersebut. Oleh karena itu perlu dilakukannya suatu analisis nilai tambah dan Break Even Point (BEP) untuk mengetahui besarnya nilai tambah yang diberikan dan besarnya tingkat pendapatan. Perumusan masalah dalam penelitian ini adalah (1) Berapa besarnya nilai tambah dari bahan baku beras hitam organik pada agroindustri minuman sereal beras hitam organik di daerah penelitian?(2) Berapa besarnya Break Even Point (BEP) yang dicapai agroindustri minuman sereal beras hitam organik di daerah penelitian? Tujuan penelitian ini adalah (1) Menganalisis besarnya nilai tambah dari bahan baku beras hitam organik pada agroindustri minuman sereal beras hitam organik di daerah penelitian. (2) Menganalisis tingkat Break Even Point (BEP) pada agroindustri minuman sereal beras hitam organik di daerah penelitian. Penentuan lokasi penelitian dilakukan secara sengaja (Purposive) dengan pertimbangan bahwa Kelurahan Cempoko Kecamatan Kepanjen Kabupaten Malang, ini merupakan salah satu daerah penghasil beras hitam organik sehingga mempunyai potensi untuk dijadikan produk olahan menjadi minuman sereal beras hitam organik. Sedangkan penentuan responden dilakukan dengan metode sensus, yaitu dengan meneliti keseluruhan agroindustri minuman sereal beras hitam organik di Kelurahan Cepokomulyo, Kecamatan Kepanjen, Kabupaten Malang yaitu sebanyak 3 agroindustri dimana 1 agroindustri skala kecil dan 2 agroindustri skala rumah tangga. Metode sensus ini dilakukan pada seluruh agroindustri minuman sereal beras hitam organik karena keseluruhan dari populasi merupakan unit dari sample. Hasil perhitungan dari penelitian ini menunjukkan bahwa besarnya nilai tambah yang diberikan pada agroindustri minuman sereal beras hitam organik skala kecil dalam pengolahan 1 kg beras hitam organik setelah diolah menjadi produk minuman sereal beras hitam organik adalah sebesar Rp 41.741,84 atau 68,15 persen. Sedangkan nilai tambah yang diberikan pada agroindustri minuman sereal beras hitam organik skala rumah tangga dalam pengolahan 1 kg beras hitam organik setelah diolah menjadi produk minuman sereal beras hitam organik adalah sebesar Rp 32.877,88. atau 60,70 persen. Agroindustri minuman sereal beras hitam organik skala kecil di Kelurahan Cepokomulyo, Kecamatan Kepanjen, Kabupaten Malang juga memiliki nilai BEP rupiah sebesar Rp 225.188,15 dan BEP unit sebesar 18,02 kg artinya agroindustri akan mencapai titik impas jika agroindustri minuman sereal beras hitam organik skala kecil harus memproduksi minuman sereal sebanyak 18,02 unit atau pada tingkat penjualan tercapai Rp 225.188,15 . Sedangkan agroindustri minuman sereal beras hitam organik skala rumah tangga memiliki BEP rupiah sebesar Rp. 250.889,82 dan BEP unit sebesar 20,07 kg artinya agroindustri akan mencapai titik impas jika agroindustri minuman sereal beras hitam organik skala rumah tangga harus memproduksi minuman sereal sebanyak 20,07 unit unit atau pada tingkat penjualan tercapai Rp 250.889,82. Hasil penelitian tersebut menunjukkan bahwa agroindustri minuman sereal beras hitam organik skala kecil memiliki nilai tambah jauh lebih besar dibandingkan dengan agroindustri skala rumah tangga. Selain itu pada agroindustri minuman sereal beras hitam organik skala kecil dapat mencapai titik impas lebih awal dibandingkan dengan agroindustri minuman sereal beras hitam organik skala rumah tangga. Oleh karena itu untuk meningkatkan besarnya nilai tambah dan pendapatan pada agroindustri minuman sereal beras hitam organik pada skala rumah tangga agar lebih efisien maka agroindustri minuman sereal beras hitam khususnya agroindustri skala rumah tangga harus lebih memperhatikan kualitas bahan baku yang akan digunakan , tenaga kerja yang lebih terampil dan teknologi yang digunakan harus lebih modern untuk meningkatkan kualitas dan kuantitas produk.

Considering the properties of agricultural products that perishable characteristics or easily damaged, then required the existence of a strategy that can change the agricultural products to be more durable and has a value added that is by keeping the linkages between the agricultural sector and the agro-industrial sector through. These linkages to be one of the characteristics of developing countries that are experiencing economic structure transformation of agriculture (agriculture) heading for the agricultural industry (industrial agriculture). This is a manifestation of the interconnectedness of agriculture sector as the industry upstream that supply raw materials and agricultural industry sector as the industry increases the value added of agricultural products at a competitive One of the agro-industry which has to process agricultural commodities into processed products is agro-organic black rice cereal beverage. The village Cepokomulyo, district of Kepanjen, Malang Regency is one of the centers of producing organic rice, one of which is organic black rice. The village Cepokomulyo, district of Kepanjen, Malang Regency has 3 units of agro-organic rice cereal beverage black where 1 unit small scale agro-industry and agro-industry unit 2 household scale. Agro-organic rice cereal beverage black that the beginning is only done on a small scale now experiencing the development of new agro-industry so as to appear but still in the household scale. The emergence of these agro-industries development due to the addition of value to agricultural products that have the value added processing. Adding value to a product will increase the value or the value of agricultural commodities is processed and can take decisions in conducting its production activities as well as the selling price of a product that will increase the profits of employers who commit such commodity processing. Therefore he had to do an analysis of the value added and the Break Even Point (BEP) to know the magnitude of the value added that given the magnitude and level of income. The problem of this study are (1) what is the added value of the main substance of the organic black rice in agro-industry of organic black rice cereal beverage in the area of the study and (2) what is Break Event Point (BEP) reached by the agro-industry of organic black rice in the study area. The objectives of this study are (1) analyzing the added value from the main substance of the organic black rice in agro-industry of organic black rice cereal beverage in the study area. (2) Analyzing the Break Event Point (BEP) of the agro-industry of the organic black rice cereal beverage in the study area. In determining the study area, the researcher use purposive method with reason that Cempoko village in Kepanjen, Malang is the main organic rice producing that potential to be fickle products into organic black rice cereal beverage. Meanwhile, in determining the respondent, the researcher use census method with analyze the whole of agro-industries of organic black rice cereal beverage in Cepokomulyo village in Kepanjen, Malang. The numbers of these agro-industries are three. One of them is taken from small-scale agro-industry and another two from home-made industries. This census method is used since the whole numbers of the population is a unit from sample. The calculation result of this research showed that the magnitude of the value added provided on industrial agriculture, organic black rice cereal beverage small scale in the products organic black rice is amounted to Rp 41.741,84 or 68,15 percent. While the added value given to the agroindustry of organic black rice cereal beverage household in the processing of scale 1 kg organic black rice once processed into cereal beverage products organic black rice was Rp 32.887,88 or 60,70 percent. Agroindustry organic black rice cereal beverage small scale in Cepokomulyo, Kepanjen, Malang has value of BEP rupiah of Rp 225.188,15 and BEP unit of 18,02 kg means would reach break even point if agroindustry organic black rice cereal beverage much needed to produce cereal 18,02 units or at the level of sales reached Rp 225.188,15. While organic black rice cereal beverage household scale have BEP rupiah is Rp 250.889,82 and BEP unit of 20,07 kg means that agroindustry will break even if agroindustry organic black rice cereal beverage household produse as much 20,07 unit or on the level of sales reached Rp 250.889,82. The research result show that agroindustry organic black rice cereal beverage small scale have far greater value than the agroindustry houshould scale. In addition to the agroindustry organic black rice cereal beverage small scale can break even earlier than the agroindustry organic black rice cereal beverage household scale. Therefore to increase the amount of value added and income on agroindustry organic black rice cereal beverage household scale to make it more efficient so the agroindustry organic black rice cereal beverage especially agroindustry household scale must pay more attention to the quality of the raw materials to be used, a more skilled workforce and technology used to be more modern to improve the quality and quantity of the products.
