Abstract

Metanil yellow merupakan salah satu jenis pewarna yang dilarang penggunaannya dalam makanan. Zat ini masih banyak disalahgunakan pada beberapa produk makanan karena sifatnya tahan panas, stabil cahaya, dan menghasilkan intensitas warna yang kuat dalam jumlah sedikit. Metode potensiometri menggunakan elektroda selektif ion (ESI) metanil yellow tipe kawat terlapis untuk mendeteksi metanil yellow telah dibuat sebelumnya dengan komposisi yang optimum (b/b) yaitu 0,5% Aliquat-336, 5% kitosan, 34,5% polimer polivinylchloride (PVC), dan 60% pemlastis dioktilphtalat (DOP) yang dilarutkan pada tetrahidrofuran (THF) dengan perbandingan 1:3 (b/v), dengan waktu perendaman optimum 25 menit. Tujuan penelitian ini adalah untuk menentukan karakter ESI metanil yellow yang meliputi faktor Nernst, rentang konsentrasi linier, batas deteksi, waktu respon, dan usia pakai. Pengukuran dilakukan menggunakan larutan uji metanil yellow konsentrasi 10-9 – 10-2 M. Hasil penelitian menunjukkan bahwa ESI metanil yellow memberikan respon Nernstian dengan faktor Nernst 64,13 mV/dekade konsentrasi (nilai yang diterima 59,2 ± 5 mV/dekade konsentrasi) dan dengan nilai koefisien korelasi (R2)=0,97; rentang konsentrasi linier 10-5 - 10-2 M; batas deteksi 0,93x10-5 M (3,49 ppm); waktu respon 50 detik; dan usia pakai selama 7 hari.

English Abstract

Metanil yellow is one of dyes that are banned for food product. This substance is still widely abused in some food product because of it’s heat resitant, stability of light, and strong color intensity in small amount. Potentiometric method to detect metanil yellow has been developed previously using coated wire metanil yellow ion selective electrode (metanil yellow CWE) under optimum composition (w/w) of 0,5% Aliquat-336, 5% chitosan, 34,5% polivinylchloride polymer (PVC), and 60% dioctylphtalate plasticizer (DOP), dissolved in tetrahydrofurane (THF) solvent with ratio of 1:3 (w/v), and optimum soaking time of 25 minutes. The purpose of this study is to determine metanil yellow ISE characters including Nernst factor, range of linear concentration, limit of detection, response time, and lifetime. The measurements were done using metanil yellow test solutions with concentration range of 10-9 - 10-2 M. The result showed that the metanil yellow CWE gave Nernstian response with the Nernst factor of 64,13 mV/decades of metanil yellow concentration (the accepted value of 59.2 ± 5 mV / decade of concentration) and with correlation coefficient (R2) of 0,97 in the linear concentration range of 10-5 - 10-2 M with limits detection of 0,93x10-5 M (3,49 ppm); response time of 50 seconds; and lifetime of 7 days.
