Abstract
Ikan nila (Oreochromis sp.) adalah salah satu ikan hasil budidaya perairan tawar yang banyak diminati oleh masyarakat Indonesia. Ikan nila memiliki nilai gizi dan nilai ekonomis cukup tinggi. Teknik iradiasi dapat menghambat pertumbuhan bakteri patogen. Metode penyimpanan pada suhu dingin 4OC dan teknik iradiasi dapat menjadi kombinasi yang baik, terutama untuk jenis bahan pangan segar atau bahan pangan dengan pengolahan minimal. Tujuan penelitian ini adalah untuk melihat pengaruh dosis iradiasi dan penyimpanan pada suhu dingin 4OC terhadap karakteristik mikrobiologis ikan nila merah segar (Oreochromis sp). Penelitian ini dilakukan di Badan Tenaga Nuklir Nasional (BATAN), Jakarta Selatan. Metode penelitian yang dipakai adalah metode Rancangan Acak Kelompok (RAK Faktorial) dengan 2 faktor. Faktor I yaitu dosis iradiasi gamma (0; 1,5; 3 kGy) pada laju dosis 1 kGy/jam, dan faktor II yaitu lama penyimpanan suhu dingin (0, 7, 14 hari) pada suhu 4˚C sehingga didapatkan 9 kombinasi perlakuan. Tiap kombinasi perlakuan dilakukan analisa cemaran mikroba meliputi bakteri aerob, koliform, Escherichia coli, Staphyloccous aureus, nilai D10, kadar air dan perubahan pH. Diduga iradiasi sinar gamma dengan dosis tertentu dan lama penyimpanan suhu dingin 4˚C dapat mempengaruhi karakteristik mikrobiologis ikan nila merah segar (Oreochromis sp). Hasil penelitian menunjukkan bahwa dosis iradiasi dan penyimpanan pada suhu dingin 4OC berpengaruh nyata terhadap karakteristik mikrobiologis namun tidak berpengaruh nyata terhadap pH, kadar air dan kandungan protein pada ikan nila merah segar (Oreochromis sp).
English Abstract
Nile Tilapia (Oreochromis sp.) is one of the fish from aquaculture of freshwater which is much in demand by the Indonesian. Nile tilapia has nutritional value and high economic value. Irradiation techniques can inhibit the growth of pathogenic bacteria. Cool storage temperature 4OC method and irradiation technique could be a good combination especially for the type of fresh food or foodstuffs with minimal processing. The purpose of this study is to examine the effect of irradiation dose and cool storage temperature 4OC on microbiological characteristics on fresh red nile tilapia (Oreochromis sp). This research was conducted in National Nuclear Energy Agency( BATAN), South Jakarta. This Research used RAK Factorial method with 2 factors. The first factor (I) was the dose of gamma irradiation (0, 1.5, 3 kGy) at dose rate of 1 kGy/h, and the second factor (II) was the duration of cool storage temperature (0, 7, 14 days) at 4OC so those were got 9 treatment combinations. Each treatment combination was analyzed by microbial contamination including aerobic bacteria, coliform, Escherichia coli, Staphyloccous aureus, D10 value, water content and pH change. It was expected that gamma irradiation with certain dose and the length of cool storage temperature at 4OC could affect the microbial characteristic of red fresh nile tilapia (Oreochromis sp.). The result from this research showed that the irradiation dose and cool storage temperature 4OC have significant effect on microbial characteristic but have not significant effect on PH, water content and protein content on red fresh nile tilapia (Oreochromis sp.).
