Abstract
Kota Malang dan Kota Batu merupakan penghasil buah apel terbesar di Indonesia dengan populasi tanaman apel di Jawa Timur sekitar 80%. Jumlah tanaman apel yang tumbuh di wilayah kota Batu pada tahun 2016 sebanyak 2.118.679/pohon dan jumlah hasil produksi buah apel sebesar 542 ton tahun 2016. Tingginya produksi buah apel di kota Batu berpotensi besar untuk dikembangkan menjadi produk olahan, salah satunya minuman sari apel. Salah satu produsen minuman sari apel adalah KSU Brosem. Persaingan industri minuman sari apel di Kota Batu yang sangat berkembang pesat menyebabkan semakin ketatnya persaingan. Kondisi persaingan ini ketat menuntut perusahaan KSU Brosem untuk terus mengembangkan kualitas produk minuman sari apel. Kualitas produk merupakan aspek yang sangat penting dalam meningkatkan daya saing produk yang dapat memenuhi kebutuhan dan keinginan konsumen. Tujuan penelitian ini adalah pengembangan kualitas minuman sari apel sangat diperlukan sehingga dapat meningkatkan jumlah penjualan agar dapat bersaing dengan perusahaan pesaing dengan memperbaiki kualitas yang dapat diterapkan oleh KSU Brosem. Metode yang digunakan dalam penelitian ini adalah Quality Function Development QFD. QFD adalah salah satu metode untuk mengetahui keinginan suatu produk oleh konsumen sebagai pedoman dalam mengembangkan suatu produk yang biasanya diterjemahkan Voice of Customer (VoC). QFD bertujuan untuk meningkatkan kualitas produk memberikan informasi terhadap kebutuhan dan keinginan dari konsumen. Responden yang dipilih berjumlah 115 sampel yaitu merupakan konsumen yang telah mengonsumsi minuman sari apel merek Brosem kemasan isi 120 ml minimal satu kali pernah mengonsumsi, serta berumur 17-60 tahun. Berdasarkan hasil penelitian diperoleh 7 prioritas perbaikan pada rencana produksi analisis dari fase I hingga fase IV, yaitu varian rasa yang bervariasi dengan kombinasi rasa lain, membuat kemasan botol plastik minuman sari apel, ukuran kemasan botol plastik dengan volume 250-300 ml, mendesain kemasan baru lebih menarik, melengkapi informasi produk kemasan, tidak menggunakan pemanis buatan, dan tidak menggunakan pengawet buatan. Rekomendasi perbaikan yang dapat dilakukan untuk mempermudah pelaksanaan rencana produksi yaitu penambahan varian rasa pada produk minuman sari apel dengan mengkombinasi rasa lain seperti cinnamon, peppermint, dan lemon. Membuat kemasan botol plastik minuman sari apel dianggap lebih praktis karena mudah dibawa dan dapat dibuka serta ditutup kembali. Desain kemasan minuman sari apel Brosem yang menarik menyantumkan informasi yang perlu ditambahkan yaitu SNI, contact customer service, kandugan gizi, dan nutrition facts.
English Abstract
Malang and Batu are the cities with biggest apple producers in Indonesia with a population of apple trees that is estimated to be approximately 80%. The number of apple trees growing in the Batu city area in 2016 was 2.118.679 / tree and the total production of apples amounted to 542 tons in 2016. The high production of apples in Batu city has great potential to be developed into processed products, one of which is apple juice drink. One of the producers of apple juice drinks is KSU Brosem, which is located on Jalan Bromo Gang I No. 13, RT01 / RW10, Sisir Urban Village, Batu District, Batu City, East Java. The competition of the apple cider beverage industry in Batu City that is very rapidly developing causes an increase in the intensity of market competition. The tight competition conditions require KSU Brosem to continue to develop the quality of apple juice beverage products. Product quality is a very important aspect in increasing product competitiveness that can meet the wants and needs of consumers. The purpose of this study is to develop the quality of apple juice drinks so that it can increase the number of sales in order to compete with competing companies by improving the quality that can be applied by KSU Brosem. The method used in this research is QFD Quality Function Development. QFD is a method used to find out the wants of consumers regarding a product as a guide in developing a product that is usually translated into Voice of Customer (VoC). QFD aims to improve product quality and provide information on the wants and needs of consumers. The number of respondents selected was 115 samples, which are consumers who have consumed the 120 ml apple juice produced by Brosem, age ranging from 17-60 years. Based on the results of the study, it was found that in the calculation and analysis from phase I to phase IV, 7 priority improvements was acquired in the production plan, namely variants of flavor that vary with other flavor combinations, making plastic bottles of apple apple juice drinks, plastic bottle packaging sizes with a volume of 250- 300 ml, designing a new packaging that is more attractive, completing product packaging information, omitting the usage of artificial sweeteners as well as artificial preservatives. Recommendations for improvements that can be made to facilitate the implementation of the production plan are adding flavor variants to apple juice drink products by combining other flavors such as cinnamon, peppermint, and lemon. Making plastic bottles of apple juice drinks is considered more practical because it is easy to carry and can be opened and closed again. The attractive design of apple juice drink packaging includes information that needs to be added, namely SNI, contact customer service, nutritional content, and nutrition facts.
