Abstract

Jambu Biji Adalah Komoditi Buah-Buahan Sumber Vitamin C Dan Β Karoten Yang Beredar Di Kota Malang. Pada Umumnya Buah-Buahan Terus Mengalami Metabolisme Pasca Panen. Kondisi Penyimpanan Seperti Pengemasan Dan Suhu Penyimpanan Dapat Mempengaruhi Mutu Buah-Buahan Baik Segi Fisik Maupun Kandungannya. Penelitian Ini Bertujuan Untuk Mengetahui Pengaruh MAS ( Modified Atmosphere Storage ) Dan Suhu Penyimpanan Terhadap Kadar Vitamin C Dan Kadar Β Karoten Buah Jambu Biji. Studi Eksperimental Menggunakan Rancangan Acak Lengkap Dilakukan Terhadap Sampel Jambu Biji Yang Memenuhi Kriteria Inklusi Yang Ditentukan. Sampel Dikemas Plastik Polietilen Dengan MAS ( Modified Atmosphere Storage ) Serta Disimpan Pada Suhu Ruang Dan Chiller (10 ⁰ C). Hasil Penelitian Menunjukkan Bahwa Pengemasan MAS Dan Penyimpanan Suhu Chiller Dapat Menghambat Penurunan Kadar Vitamin C Dan Kadar Β Karoten Secara Signifikan Bila Dibandingkan Dengan Penyimpanan Suhu Ruang Dan Tanpa MAS. Kesimpulan Dari Penelitian Ini Adalah MAS ( Modified Atmosphere Storage ) Dan Suhu Penyimpanan Memberikan Pengaruh Dalam Mempertahankan Kandungan Vitamin C Dan Kadar Β Karoten Jambu Biji. Berdasarkan Penelitian Ini, Disarankan Penyimpanan Jambu Biji Dikemas Plastik Polietilen Dan Disimpan Dalam Suhu Chiller .

English Abstract

Guava Is One Type Of Commodity Fruit Source Of Vitamin C And Β Carotene In Malang. Generally, Fruits Usually Have To Post-Harvest Metabolism. Storage Conditions Such As Packaging And Storage Temperature May Affect Fruit Quality Of Both The Physical And Content. This Study Aimed To Determine The Effect Of Using Modified Atmosphere Storage (MAS) Packaging Polyethylene In Chiller Temperature And Room Temperature On Levels Of Vitamin C And Β Carotene Content Of Guava Fruit. Experimental Studies Conducted Using Completely Randomized Design On Sample Of Guava Which Met The Inclusion Criteria Specified. Samples Packed Polyethylene Using Modified Atmosphere Storage (MAS) And Stored At Room Temperature And Chiller Temperature (10 ⁰ C). The Results Showed That The MAS And Storage Temperature Chiller Can Inhibit Decreased Level Of Vitamin C And Β Karoten Levels Significantly When Compared With Storage At Room Temperature And Without The MAS. The Conclusion Of This Study Is The Packaging And Storage Temperature Influence On The Content Of Vitamin C And Β Carotene Of Guava. Based On This Study, The Recommended Storage Guava Packed By Polyethylene Plastic And Stored In Cold Temperatures.
