Abstract
Minyak goreng merupakan salah satu bahan pangan yang dikonsumsi oleh sebagian masyarakat luas. Konsumsi minyak goreng di Indonesia terus mengalami peningkatan setiap tahunnya. Salah satu bahan baku alternatif pembuatan minyak goreng ramah lingkungan adalah larva kumbang hitam atau superworm (Zophobas morio). Superworm mengandung 80% asam lemak dan produktivitas tinggi. Peningkatan kualitas minyak goreng superworm dilakukan dengan cara netralisasi alkali menggunakan NaOH dan bleaching menggunakan bentonit. Penelitian ini bertujuan untuk mengetahui pengaruh konsentrasi NaOH dan bentonit yang sesuai terhadap minyak goreng superworm. Metode penelitian menggunakan Rancangan Acak Kelompok pola Faktorial dengan 2 faktor, yaitu konsentrasi NaOH (16 oBe, 18 oBe, dan 20 oBe) dan bentonit (1,2 %b/b, 1,4 %b/b, dan 1,6 %b/b). Parameter uji pada penelitian ini yaitu kadar asam lemak bebas dan kadar air. Hasil penelitian menunjukkan bahwa interaksi antar kedua faktor yaitu konsentrasi NaOH dan bentonit memberikan pengaruh signifikan terhadap nilai kadar asam lemak bebas dan kadar air minyak goreng superworm sebesar 0,235 Mg KOH/g dan 0,047 %b/b. Nilai kadar asam lemak bebas memenuhi standar kadar asam lemak minyak goreng (SNI. 3741:2013) maksimal 0,6 mg KOH/g, sedangkan nilai kadar air hanya beberapa yang memenuhi standar kadar air minyak goreng (SNI. 3741:2013) maksimal 0,15 % b/b. Hasil perlakuan terbaik didapatkan pada perlakuan N3B3 (konsentrasi NaOH 20 oBe dan bentonit 1,6 %b/b) terhadap minyak goreng superworm.
English Abstract
Cooking oil is one of the food ingredients consumed by most people. Consumption of cooking oil in Indonesia continues to increase every year. One of the alternative raw materials for making environmentally friendly cooking oil is superworm or darkling beetle larvae (Zophobas morio). Superworm contains 80% fatty acid and high productivity. Increasing the quality of superworm cooking oil is done by neutralizing alkali using NaOH and bleaching using bentonite. This study aims to determine the effect of the corresponding concentration of NaOH and bentonite on superworm cooking oil. The research method used Factorial Random Block Design with 2 factors, ie NaOH concentration (16 oBe, 18 oBe, and 20 oBe) and bentonite (1.2% w/w, 1.4% w/w and 1.6% w/w). The test parameters in this study were free fatty acid content and water content. The results showed that the interaction between the two factors that is the concentration of NaOH and bentonite give significant influence to the value of free fatty acid and water content of superworm cooking oil of 0.235 Mg KOH/g and 0.047% w/w. The value of free fatty acid content fulfills the standard of cooking oil fatty acid (SNI 3741: 2013) maximum of 0.6 mg KOH/g, while the water content value is only few that meet the cooking oil content standard (SNI 3741: 2013) maximum 0,15% w/w. The best treatment result was obtained at N3B3 treatment (20 oBe NaOH and 1.6% w/w bentonite concentration) to superworm cooking oil.
