Abstract
Daun kelor (Moringa oleifera) dikenal sebagai bahan makanan ”Superfood” yang kaya akan protein, fenolik, asam amino dan asam lemak tak jenuh yang memiliki banyak manfaat bagi kesehatan manusia. Pengeringan merupakan perlakuan untuk menurunkan kadar air bahan hingga persentase yang berpengaruh terhadap karakteristik bahan daun kelor. Konsumsi dalam bentuk segar sudah lazim, namun dekade terakhir banyak dalam bentuk sediaan kering. Pulse Electric Field (PEF) merupakan salah satu perlakuan pendahuluan yang penting dalam pengeringan sayuran dan buah. Elektroporasi pada daun kelor diaplikasikan untuk mengetahui efektifitas dan efisiensi pengeringan pada daun. Pada optimasi proses ekstaksi senyawa penting pada daun kelor dilakukan perlakuan pendahuluan Pulse Electric Field (PEF) pada voltase 1000 V, 1500 V, 2000 V dengan pemilihan suhu 40 ºC, 50 ºC dan 60 ºC. Penelitian ini bertujuan pertama, menganalisis pengaruh suhu terhadap pola penurunan periode pengeringan dan model matematika pengeringan daun kelor (Moringa oleifera) yang tepat tanpa perlakuan pendahuluan PEF. Kedua, pembentukan model matematika pengeringan daun kelor (Moringa oleifera) yang tepat dengan perlakuan pendahuluan Pulse Electric Field dan pengaruh perlakuan pendahuluan Pulse Electic Field terhadap rendemen fenol, total fenol, aktivitas antioksidan dan mikrostruktur daun kelor (Moringa oleifera). Ketiga, menganalisis perlakuan pendahuluan tegangan Pulse Electric Field dan suhu pengeringan yang optimal terhadap kadar air daun kelor (Moringa olifera) dan terhadap rendemen fenol, total fenol, aktivitas antioksidan ekstrak daun kelor yang diperoleh.
English Abstract
Moringa leaves (Moringa oleifera) are known as "Superfood" foodstuffs rich in proteins, phenolics, amino acids and unsaturated fatty acids that have many benefits for human health. Drying is a treatment to reduce the moisture content of the material to a percentage that is different from the characteristics of the Moringa leaf material. Consumption in fresh form is prevalent, however, the last decade is a lot in dried leaves. Pulse Electric Field (PEF) is one of the important preliminary treatments in the drying of vegetables and fruits. Electroporation on Moringa leaves is applied to determine the effectiveness and efficiency of drying on the leaves. In the optimization of the extraction process of important compounds in Moringa leaves, preliminary treatment of Pulse Electric Field (PEF) was carried out at voltages of 1000 V, 1500 V, 2000 V with temperature selection of 40 ºC, 50 ºC and 60 ºC. This study aims first, analyzing the effect of temperature on the pattern of decreasing drying period and the mathematical model of proper drying of Moringa leaves (Moringa oleifera) without preliminary treatment of PEF. Second, the formation of a mathematical model of proper drying of Moringa leaves (Moringa oleifera) with the preliminary treatment of the Pulse Electric Field and the influence of the Pulse Electric Field preliminary treatment on the yield of phenol, total phenol, antioxidant activity and microstructure of Moringa leaves (Moringa oleifera). Third, analyze the preliminary treatment of Pulse Electric Field voltage and optimal drying temperature against the moisture content of Moringa leaves (Moringa oleifera) and against phenol yield, total phenol, antioxidant activity of Moringa leaf extract obtained.
