Abstract

Paprika merupakan jenis cabai besar yang berasal dari suku terung terungan dan sayuran yang memiliki prospek pasar yang terbuka dan cukup luas baik pasar lokal maupun ekspor. Namun demikian. Karena paprika merupakan jenis sayuran yang tidak awet (perishable commodity), maka perlu penanganan pasca panen yang tepat Penggunaan jenis bantalan bertujuan untuk mengurangi kerusakan mekanik buah saat pengangkutan. Bantalan kemasan dapat meredam benturan antar paprika sehingga dapat meminimalisir kerusakan mekanis paprika. Tujuan Penelitian ini adalah menganalisis pengaruh penggunaan jenis bantalan kemasan yang berbeda terhadap kerusakan mekanis (susut bobot, kekerasan dan luas kerusakan mekanis) dan menganalisis pengaruh lama penggetaran terhadap kerusakan mekanis (susut bobot, kekerasan dan luas kerusakan mekanis). Metode penelitian yang dilakukan adalah dengan rancangan acak kelompok (RAK) model faktorial dengan dua faktor yaitu faktor jenis bantalan (tanpa bantalan, net foam, pulp, dan pelepah pisang) dan faktor lama simulasi getaran dengan (1jam, 2 jam, 3 jam). Data dianalisa dengan parameter uji susut bobot, uji kekerasan, dan uji luas kerusakan. Hasilnya adalah jenis bantalan berpengaruh terhadap nilai kekerasan dan susut bobot paprika. Perlakuan terbaik terhadap paprika adalah pada bantalan net foam dengan penurunan susut bobor sebesar 0,689% , nilai kekerasan buah sebesar 0,112 kgf/mm2, dan luas kerusakan sebesar 88,519 mm2. Lama penggetaran tidak berepengaruh nyata terhadap susut bobot, nilai kekerasan dan luas kerusakan.

English Abstract

Paprika is a type of large chili from eggplant tribe. Paprika is a one of type of vegetables that have market prospects and wide enough both local and export markets. However paprika is a perishable commodity, it is necessary to have proper postharvest handling. One of them is on packaging and transportation process. Using type of pad aims to reduce the mechanical damage of the fruit when transporting. The packing pads are applied to the pepper when the next packing is done with vibration simulation using vibrating table simulation engine. The purpose of this study was analyze effect of using different types of packaging pads on mechanical damage (weight shrinkage, hardness and extent of mechanical damage) and to analyze the effect of long simulation of vibration on mechanical damage (weight shrinkage, hardness and extent of mechanical damage). The research method is randomized block design (RAK) of factorial model with two factors: pads type factor (without pads, net foam, pulp, and banana stem) and long vibration simulation factor with (1h, 2hr, 3h). Data were analyzed by weight loss test parameters, hardness test, and damage test area. The results obtained from this study is the type of pads affect the value of hardness and shrinkage of paprika weight. The best result on paprika is on net foam pad with decrease of shrinkage by 0,689%, hardness value of fruit equal to 0,112 kgf / mm2, and damage area equal to 88,519 mm2. The duration of the vibration has no significant effect on the weight shrinkage, the value of hardness and the extent of the damage. Base long vibration simulation, best result on paprika is on 1h long vibration with decrease of weight loss by 0,903%, hardness value of fruit equal to 0,092 kgf / mm2, and damage area equal to 117,694 mm2
