Abstract
Besarnya tingkat produksi buah apel, membuat banyak pelaku Usaha Kecil dan Menengah (UKM) kota Batu mengolah apel menjadi beberapa jenis bentuk olahan, salah satunya adalah keripik apel. UKM Excellent Fruits Unit II merupakan UKM yang memproduksi keripik apel yang terletak di Kota Batu. Peningkatan jumlah usaha olahan keripik apel di Batu membuat UKM Excellent Fruits Unit II perlu meningkatkan kualitasnya agar tidak kalah bersaing dan mampu memenangkan pasar dengan memenuhi kebutuhan konsumen. Produk yang berkualitas sangat dipengaruhi oleh kualitas bahan baku yang digunakan, oleh karena itu, kegiatan pengadaan bahan baku penting untuk diperhatikan. Tujuan dari penelitian ini adalah mengetahui tingkat atribut yang dipentingkan dan mengetahui respon teknis yang diberikan dalam memenuhi kepuasan konsumen. Metode yang digunakan pada penelitian ini adalah Quality Function Deployment (QFD) Modifay. Metode QFD digunakan untuk menerjemahkan kebutuhan terhadap karakteristik bahan baku dan pertimbangan kemampuan perusahaan dalam memenuhi kebutuhan UKM Excellent Fruits Unit II dengan bantuan House of Quality (HOQ). Penelitian ini menggunakan 3 HoQ dalam menerjemahakan keinginan dan respon teknis pada keanggotaan rantai pasok keripik apel. Terdapat beberapa tahapan dalam pembentukan HoQ yaitu tahap voice of costomer, tahapan perencanaan, tahap respon teknis dan relationship, tahap penentuan bobot prioritas, tahap penentuan hubungan teknis. Penelitian ini menggunakan 30 responden dan 3 responden pakar yaitu pemilik UKM Excellent Fruit Unit II 1 responden, pengepul buah apel 1 responden, dan petani buah apel 1 responden. viii Hasil dari penelitian terdapat atribut yang dipentingakan oleh konsumen secara berturut-turut adalah keripik apel renyah dan keripik apel bulat utuh (tidak remuk), aroma keripik yang dihasilkan merupakan aroma khas apel, aroma keripik apel tidak tengik, keripik apel tidak berminyak, rasa apel tidak terlalu asam, dan warna keripik putih sampai kuning dan respon teknis yang diberikan UKM Excellent Fruit Unit II adalah warna buah apel manalagi hijau, tidak terdapat bintik kuning pada apel, tekstur buah keras dan tekstur buah utuh, tidak ada kebusukan pada apel, aroma buah yang khas. Atribut respon teknis pengepul dalam memenuhi keinginan berdasarkan tingkat kepentingan atribut respon teknis UKM Excellent Fruit Unit adalah pemilihan grade, proses penyimpanan yang tepat, meminimalkan waktu pengiriman dengan, memilih bahan kemasan, dan memperbaiki media transportasi. Atribut respon teknis yang dipentingkan pengepul adalah warna buah apel hijau, tekstur buah keras, ukuran buah besar, rasa buah manis, dan aroma khas apel. Respon teknis petani dalam memenuhi keinginan pengepul adalah masa panen di antara 4-5 bulan, monitoring fisiologi buah, memperhatikan suhu penyimpanan, pemberian pupuk, pengendalian hama dan prosedur pemanenan
English Abstract
The production incrasing of apples make a lot of small and medium enterprises (SME) in Batu city produce apples into some kind of product, one of them is apple chips. UKM Excellent Fruits Unit II is an SME that produce apple chips located in Batu city. The number of business which produced apple chips in Batu city is increasing that makes UKM Excellent Fruits Unit II should improve its product quality to compete and can win the market sharcing in fulfill consumer needs. A product quality is influenced by quality of the raw material, so the management of the company should give attation on procurement of raw material. This research aime to determine the improtant level attributes and know the technical responses given to fulfill consumer satisfaction. The method used in this research was Quality Function Deployment (QFD) Modifay. QFD is a structured approach in defining the concept of what the needs, wants and expectations of consumers to be translated into specific planning for production or manufacturing. The QFD method is used to translate the needed for consideration of raw materials characteristing and the consideration of the company’s ability to meet the needs of UKM Excellent Fruits Unit II using House of Quality (HoQ). This study used 3 HOQ in translating the wishes and technical response to the member of apple chips supply chain. There are several stages in the formation stage HOQ, i.e voice of costomer, planning matrix stages and the technical response and relationship phase, and the priority weighting stage, the stage of determining the technical relationship. Responden of this research were 30 consumers of UKM Excellent Fruit Unit II’s apple chips and 3 experts which were the owner of UKM Excellent Fruit Unit II, apples collector, and apple farmers. x The research results, showed that there were important attributes for the consumer, i.e : crispy apple chips and apple chips are not broken, the aroma of apple chips was spesific aroma apple, not rancid aroma of apple chips, apple chips are not greasy, the taste of apples are not too sow and the color of the chips from white to yellow. The technical responses given by UKM Excellent Fruits Unit II were the color of the “manalagi” apples is green, no yellow spots on apples, hard texture apple, fresh apples, the aroma of fruits is specific. Technical attributes response of collectors for fulfilling the desire of importance attributes UKM Excellent Fruits Unit II were grading, appropriate storage process, minimizing the delivery time, choosing packaging materials, and improving the transportation. The needs of collection for aplle quality from farmer were the green color, the hard texture of apple, the big size apple, sweet apple flavors, and specific aroma of apples. Technical response of farmers to fulfilling the collectors desire were the harvest between 4-5 months, monitoring the physiology of the fruit, pay attention to the storage temperature, fertilizer, pest control and harvesting procedures.
