Abstract

Penelitian ini bertujuan untuk mengetahui adanya perubahan impedansi jus apel Anna (Malus sieversii) karena pengaruh penambahan bahan pemanis. Pemanis yang digunakan adalah gula dan aspartam. Penelitian ini menggunakan chamber pengukuran yang terdiri dari plat sejajar sebagai injeksi arus dan elektroda jarum. Pengukuran impedansi diambil dengan menggunakan Picoscope 5244B. Bahan diinjeksi dengan arus AC sebesar 1mA. Frekuensi yang diukur sebesar 100 Hz – 1 MHz. Impedansi listrik didapatkan hasil perhitungan tegangan dibagi oleh arus injeksi. Gula pasir yang dicampurkan pada jus apel sebesar 10, 20, 30, 40, 50, 60 dan 70 gram. Pemanis aspartam yang dicampurkan pada jus apel sebesar 0,8; 1,2; 1,6; 2; 2,4; 2,8 dan 3,2 gram. Nilai impedansi turun seiring dengan naiknya frekuensi. Nilai impedansi jus apel dengan variasi penambahan gula mengalami kenaikan seiring naiknya massa gula. Nilai impedansi jus apel dengan variasi penambahan aspartam tidak berubah secara signifikan.

English Abstract

This study was aimed to know impedance changed in Anna apple juice (Malus sieversii) because of sugar sweetener and aspartame addition. The study was using a measurement chamber, consisted of parallel plates as a current injector, and two electrode needles. The impedance measurement was taken using Picoscope 5244B. The sample is injected with a current of 1mA. The measured frequency was 100 Hz - 1 MHz. Electrical impedance was obtained by calculating the voltage divided by the injection current. The variations of sugar mixed in apple juice were 10, 20, 30, 40, 50, 60 and 70 gram. The sweetener of aspartame mixed variations with apple juice were 0.8; 1,2; 1.6; 2; 2.4; 2.8 and 3.2 grams. The impedance value falls as the frequency increases. The value of apple juice impedance with variations in the addition of sugar increase as the mass of sugar increase. The value of apple juice impedance with the variation of aspartame addition did not change significantly.
