Abstract
Penelitian ini bertujuan untuk menganalisa pengaruh siklamat dan gula tebu terhadap nilai impedansi listrik air kelapa muda. Pengukuran nilai impedansi listrik pada air kelapa muda yang dicampur siklamat dan gula tebu menggunakan sistem empat elektroda yang terbuat dari emas dan alat picoscope tipe 5244B. Pengukuran dilakukan dengan cara menginjeksikan arus AC sebesar 1 mA pada elektroda dalam rentang frekuensi 1 Hz – 1 MHz. Hasil pengukuran didapatkan bahwa frekuensi mempengaruhi nilai impedansi listrik yang terukur. Pembacaan nilai gelombang yang stabil berada pada frekuensi 100 Hz – 50000 Hz. Nilai impedansi listrik total air kelapa muda terukur pada frekuensi tersebut yaitu sebesar (232,02 – 210,45 Ω). Penambahan siklamat menyebabkan penurunan nilai impedansi listrik, pada penambahan konsentrasi terendah 0,1gr menyebabkan penurunan nilai impedansi listrik menjadi (190,01 – 171,87 Ω). Sementara penambahan gula tebu menyebabkan penurunan nilai impedansi listrik, pada penambahan konsentrasi terendah 25 gr mengakibatkan kenaikan nilai impedansi listrik menjadi (410,05 – 381,91 Ω).
English Abstract
This research was intended to analyze the effect of cyclamate and cane sugar on young coconut water. Measurement of the electrical impedance value on young coconut water samples mixed each with cyclamate and cane sugar was using system of four electrode, which made from gold, and picoscope Type 5244B. The measurement exercised by injecting an AC current in the amount of 1mA in a frequency range from 1 Hz – 1 MHz to the electrode. From measurement result was obtained that frequency affect electrical impedance value. Waveform can be read in stable form at frequency range of 100 Hz – 50000 Hz. Total electrical impedance value of young coconut water at stable frequency was (232,02 – 210,45 Ω). Addition of cyclamate result on decreasing electrical impedance value, at the lowest concentration by 0,1 gr electrical impedance value became (190,01 – 171,87 Ω). While addition of cane sugar result on increasing electrical impedance value, at the lowest concentration by 25 gr electrical impedance value became (410,05 – 381,91 Ω).
