Abstract
Belimbing manis (Averrhoa carambola) merupakan produk hortikultura yang jumlah produksinya di Indonesia cukup tinggi sepanjang tahun. Fruit leather merupakan salah satu produk pangan yang terbuat dari olahan buah yang berbentuk lembaran tipis. Pada pembuatan fruit leather, perlu dilakukan penambahan gelling agent (bahan pembentuk gel). Pada penelitian ini gelling agent yang digunakan adalah gum arab. Selain itu, proporsi buah dan air juga mempengaruhi karakteristik fruit leather yang dihasilkan. Penelitian ini menggunakan metode RAL (Rancangan Acak Lengkap) dengan dua faktor. Faktor tersebut terdiri dari konsentrasi gum arab dan proporsi buah : air. Faktor konsentrasi gum arab terdiri atas 3 level (1%, 3%, 5%) dan faktor proporsi buah : air terdiri atas 2 level (1:1 dan 3:1) dengan tiga kali ulangan sehingga menghasilkan 18 satuan percobaan. Data hasil penelitian dianalisis menggunakan metode ANOVA dengan selang kepercayaan 5% untuk melihat perbedaan dan pengaruh pada masing-masing perlakuan. Apabila terdapat pengaruh maka dilanjutkan dengan uji BNT dan DMRT dengan selang kepercayaan 5%. Perlakuan terbaik dipilih dengan menggunakan metode Zeleny. Hasil penelitian menunjukkan bahwa konsentrasi gum arab berpengaruh terhadap kadar air, vitamin C, tekstur dan proporsi buah : air berpengaruh terhadap kadar air, pH, antioksidan IC50, vitamin C, total asam dan tekstur. Perlakuan terbaik pada leather belimbing manis adalah pada perlakuan konsentrasi gum arab 5% dan proporsi buah : air 3:1 dengan parameter fisikokimia sebagai berikut: kadar air 20,87%; pH 4,07; vitamin C 27,54 mg/100g; total asam 0,26%; antioksidan IC50 2015,48 ppm dan tekstur 7,07 N serta penilaian hedonik warna 3,53; aroma 3,17; tekstur 3,37 dan rasa 3,93.
English Abstract
Starfruit (Averrhoa carambola) is a horticultural product which the amount of production in Indonesia is quite high throughout the year. Fruit leather is one of the food products which is made from processed fruit in the thin sheets. In the manufacture of fruit leather, it is necessary to add a gelling agent. In this research, arabic gum is used as the gelling agent. In addition, the fruit and water proportion are also affecting the result of fruit leather characteristics. Research used methods Completely Randomized Design with two factors. The factors is arabic gum concentration and fruit : water proportion. Arabic gum concentration factor consist of 3 level (1%, 3%, 5%) and fruit : water proportion factor consist of 2 level (1:1 and 3:1) with three replications, in order to obtain 18 units of the experiment. The data were analyzed by ANOVA with 5% confidence interval, to determine whether there is a difference or impact in each treatment. If test result indicate there is a real difference then further tested by Least Real Difference and DMRT with 5% confidence interval. While for the selection of the best treatments using the method of Zeleny. The result showed that arabic gum concentration influenced to the rate of water, vitamin C, texture and fruit : water proportion influenced to the rate of water, pH, antioxidant IC50, vitamin C, total acid, and texture. The best treatment of starfruit leather obtained by arabic gum concentration of 5% and fruit : water proportion of 3:1 who has a physicochemical parameters as follows: the rate of water of 20,87%; pH of 4,07; vitamin C of 27,54 mg/100g; total acid of 0,26%; antioxidant IC50 of 2015,48 ppm and texture of 7,07 N. While the organoleptic parameters have a favorite leather obtained by arabic gum concentration of 3% and fruit : water proportion of 3:1 who has colors of 3,53; scent of 3,17; texture of 3,37 and taste of 3,93.
