Abstract

Kunyit ( Curcuma domestica Val.) merupakan salah satu tanaman obat yang menjadi salah satu bahan baku utama pembuatan jamu, produk kecantikan, bumbu dapur dan pewarna alami. Berdasarkan data dari BPS tahun 2018 kunyit merupakan tanaman obat paling banyak kedua yang diproduksi di Indonesia pada tahun 2017 yaitu sebesar 128.338.949 kg. Jumlah ini yang menjadikan kunyit sangat berlimpah di Indonesia. Kunyit mengandung senyawa utama yaitu senyawa kurkuminoid yang mengandung kurkumin yang memberi warna kuning pada kunyit. Kandungan senyawa kurkumin pada kunyit sebesar 3-4%. Senyawa ini memiliki banyak manfaat salah satunya yaitu sebagai antioksidan. Namun, kadar air kunyit yang cukup tinggi antara 80-90% bb menyebabkan kunyit mudah rusak dan busuk. Karena itulah diperlukan proses pengawetan kunyit salah satunya yaitu pengeringan. Oleh karena itu tujuan dari penelitian ini adalah untuk mengetahui pengaruh proses pengeringan dengan mesin pengering suhu rendah RH rendah terhadap kandungan kurkumin pada kunyit. Penelitian ini menggunakan rancangan acak kelompok dengan 3 perlakuan suhu (20ºC, 30ºC, dan 40ºC) sebanyak 3 ulangan masing masing perlakuan. Hasil penelitian menunjukkan bahwa pada suhu 20ºC menunjukkan kandungan kurkumin sebesar 986, 53 ppm, pada suhu 30ºC sebesar 976,53 ppm, dan pada suhu 40ºC sebesar 973,87 ppm. Hal ini juga menunjukkan bahwa semakin kecil suhu yang digunakan kandungan kurkumin semakin besar.

English Abstract

Turmeric (Curcuma domestica Val.) is a medicinal plant which is one of the main raw materials for making herbal medicine, beauty products, kitchen spices and natural dyes. Based on data from BPS in 2018, turmeric was the second most abundant medicinal plant produced in Indonesia in 2017, namely 128,338,949 kg. This amount makes turmeric very abundant in Indonesia. Turmeric contains the main compound, namely curcuminoid compounds which contain curcumin which gives turmeric its yellow color. The curcumin compound content in turmeric is 3-4%. This compound has many benefits, one of which is as an antioxidant. However, the water content of turmeric is quite high, between 80-90% bw, causing turmeric to easily damage and rot. That's why a turmeric preservation process is needed, one of which is drying. Therefore, the aim of this research is to determine the effect of the drying process using a low RH low temperature drying machine on the curcumin content in turmeric. This study used a randomized block design with 3 temperature treatments (20ºC, 30ºC, and 40ºC) with 3 replications of each treatment. The research results showed that at a temperature of 20ºC the curcumin content was 986.53 ppm, at a temperature of 30ºC it was 976.53 ppm, and at a temperature of 40ºC it was 973.87 ppm.
