Abstract
Beras analog merupakan beras yang dibuat dengan bentuk dan kandungan yang hampir menyerupai beras. Kulit apel manalagi banyak sekali memiliki kandungan yang baik bagi tubuh seperti katekin, kuersetin glikosida, asam kafeat dan asam klorogenat. Salah satu kandungan yang banyak dimiliki kulit apel yaitu zat kuersetin yang merupakan golongan senyawa flavonol. Penelitian ini bertujuan untuk mengetahui bagaimana pengaruh subtitusi tepung kulit apel terhadap beras analog terkait karakteristik fisik beras analog meliputi: kadar air, kadar abu dan daya rehidrasi. Penelitian ini menggunakan 4 formulasi penambahan tepung komposit yaitu dengan tepung sorgum, tepung jagung, tepung sagu dan caboxymethyl cellulose. Hasil penelitian menunjukkan bahwa pengaruh subtitusi tepung komposit di dalam proses pembuatan beras analog kulit apel memiliki perbedaan signifikan terhadap semua parameter pengujian. Hasil penelitian ini menunjukkan nilai kadar air antara 6,10% – 7,73 %, nilai kadar abu antara 1,34% – 1,46 % dan besaran nilai daya rehidrasi antara 52,27% – 56,00 %.
English Abstract
Analog rice is rice made with a shape and composition that is almost similar to rice. Manalagi apple peel contains a lot of content that is good for the body such as catechins, quercetin glycosides, caffeic acid and chlorogenic acid. One of the ingredients that many apple peel have is quercetin which is a class of flavonol compounds. This study aims to determine how the effect of substitution of apple peel flour on analog rice is related to the physical characteristics of analog rice which include: water content, ash content and rehydration. This study used 4 formulations of adding composite flour namely sorghum flour, corn flour, sago flour and caboxymethyl cellulose. The results showed that the effect of composite flour substitution on the apple peel analog rice production process had a significant difference in all test parameters. The results of this study indicate that the water content value is between 6,10% - 7,73%, the ash content value is between 1.34% - 1.46% and the rehydration power test value is between 52,27% - 56.00%.
