Abstract

Kopi liberika merupakan jenis kopi yang berasal dari dataran rendah Monrovia di daerah Liberika. Jenis kopi ini cocok ditanam di daerah yang memiliki tingkat kelembaban yang tinggi dan panas. Jika dibandingkan dengan kopi robusta dan arabika, kopi liberika memiliki mutu yang lebih rendah daripada kedua jenis kopi tersebut dari segi kualitas buah. Namun kopi liberika memiliki cita rasa yang khas yaitu memiliki aroma buah nangka. Oleh karena itu permintaan kopi liberika saat ini mulai meningkat karena cita rasa khas yang dihasilkan sudah mulai dikenal dan diminati oleh para konsumen kopi. Untuk meningkatkan mutu dan citarasa kopi liberika yang dihasilkan, maka perlu diketahui kondisi lingkungan kebun yang digunakan. Jika mutu dan citarasa kopi liberika yang dihasilkan semakin baik, maka minat konsumen terhadap kopi liberika akan semakin tinggi dan nilai ekonominya akan menjadi lebih tinggi. Oleh karena itu, penelitian ini dilakukan bertujuan untuk mengeksplorasi cita rasa dan mengetahui pengaruh faktor ekologi kebun terhadap hasil cita rasa dari 6 kebun berbeda di Kota Banyuwangi, Jawa Timur. Penelitian dilakukan dengan menggunakan Rancangan Percobaan Acak Lengkap (RAL) dengan enam sampel dari enam kebun berbeda yaitu K1, K2, K3, K4, K5, dan K6. Setiap percobaan diulang sebanyak tiga kali ulangan. Keenam sampel disangrai dengan level dan dianalisis profil sensorinya oleh panelis terlatih sejumlah 8 orang. Data hasil penelitian dianalisis dengan menggunakan metode Analysis of Variance (ANOVA) selang kepercayaan 95% dan dilanjutkan dengan uji Tukey apabila ditemukan perbedaan nyata. Perbedaan kondisi kebun berpengaruh nyata terhadap citarasa earthy, rasa manis, rasa pahit, rasa asam, dan pH seduhan kopi. Selain itu perbedaan kondisi kebun juga mempengaruhi mutu dari biji kopi hijau yang dihasilkan. Adanya perbedaan kandungan hara pada tanah di tiap kebun akan mempengaruhi mutu dan citarasa dari biji kopi yang dihasilkan.

English Abstract

Liberika coffee is a type of coffee that comes from the lowlands of Monrovia in the Liberika region. This type of coffee is suitable for planting in areas with high humidity and heat. When compared to Robusta and Arabica coffee, Liberika coffee has worse quality than the two types of coffee in terms of fruit quality. However, Liberika coffee has a distinctive taste, which has the aroma of jackfruit. Therefore, the demand for Liberika coffee is currently starting to increase because the resulting distinctive taste is becoming known and in demand by coffee consumers. To improve the quality and taste of the liberika coffee produced, it is necessary to know the environmental conditions of the plantations used. If the quality and taste of the Liberian coffee produced is getting better, the consumer interest in Libertarian coffee will be higher and the economic value will be higher. Therefore, this research was conducted with the aim of exploring flavors and knowing the influence of garden ecological factors on the taste yields of 6 different gardens in Banyuwangi City, East Java. The study was conducted using a completely randomized trial design (CRD) with six samples from six different gardens, namely K1, K2, K3, K4, K5, and K6. Each experiment was repeated three times. The six samples were roasted at a medium roast level and then ground, brewed, and analyzed for sensory profiles by 8 trained panelists. The research data were analyzed using the Analysis of Variance (ANOVA) method with a 95% confidence interval and continued with the Tukey test if a significant difference was found. Differences in garden conditions significantly affect the earthy taste, sweet taste, bitter taste, sour taste, and the pH of the coffee brew. In addition, differences in garden conditions also affect the quality of the green coffee beans produced. The difference in the nutrient content of the soil in each garden will affect the quality and taste of the coffee beans produced
