Abstract

UMKM sebagai usaha mikro memiliki modal dan sarana prasarana produksi yang terbatas, sehingga higiene dan sanitasi tidak mendapat prioritas utama. UMKM “PT” sebagai salah satu produsen minuman buah termasuk sebagai pangan kategori risiko sedang. Jaminan berupa sertifikat izin edar MD yang dikeluarkan oleh BPOM diperlukan untuk menjamin keamanan pangan yang diproduksi. Tujuan penelitian ini untuk memberikan pendampingan terhadap perbaikan penerapan CPPOB serta analisis koliform produk. Analisis kesenjangan CPPOB merupakan tahap pertama dalam melakukan pendampingan yang dilakukan menggunakan formulir gap assessment. Penilaian sesuai dengan Peraturan Keputusan BPOM RI Nomor HK.02.02.1.2.01.22.63 Tahun 2022 tentang Pedoman Pemeriksaan Sarana Produksi Pangan Olahan. Penilaian dikategorikan menjadi 4 kategori katidaksesuaian yaitu kritis, serius, major, dan minor untuk diberikan bobot penilaian. Bobot penilaian setiap klausul akan dijumlahkan untuk mengetahui rating sarana produksi pangan olahan dalam indikator A, B, C, dan D. Ketidaksesuaian pada industri akan dilakukan tindakan perbaikan agar diperoleh nilai ≥ B untuk pengajuan IPCPPOB. Analisis mikrobiologi koliform produk dilakukan untuk memperbaiki ketidaksesuaian pada aspek sumber air sebagai salah satu persyaratan pengajuan IPCPPOB. Analisis koliform menggunakan metode MPN dengan dua tahapan yaitu tahap pendugaan dan penegasan. Hasil indeks positif uji MPN dibandingkan dengan tabel MPN untuk mengetahui jumlah cemaran koliform. Hasil analisis kesenjangan penerapan CPPOB pada UMKM “PT” mendapatkan rating D (sangat kurang) dengan 10 ketidaksesuaian minor, 23 major, dan 2 kritis. Ketidaksesuain tersebut dilakukan tindakan perbaikan sehingga setelah perbaikan mendapatkan rating B (baik). UMKM “PT” telah mendapatkan sertifikat IPCPPOB dengan pengajuan melalui website OSS dan e-sertifikasi. Hasil uji koliform yaitu <3,0 MPN/ml pada sampel minuman buah yang menggunakan sumber air galon isi ulang dan 3,6 MPN/ml pada minuman buah menggunakan sumber air dari PDAM.

English Abstract

UMKM as a microenterprise possesses limited capital and production facilities and infrastructure, consequently hygiene and sanitation does not receive primary priority. UMKM “PT” as a fruit beverage producer is classified as a food product with moderate risk. MD distribution permit certificate issued by BPOM is required to ensure the safety of the food produced. The purpose of this study is to provide assistance in improving the application of CPPOB and product coliform analysis. The analysis of CPPOB gaps is the first step in conducting assistance, which is carried out using the gap assessment form. The assessment consists of 68 clauses in accordance with the Decree of the Indonesian Food and Drug Authority Number HK.02.02.1.2.01.22.63 of 2022 concerning Guidelines for Inspection of Processed Food Production Facilities. The assessment of nonconformities is categorized into 4 categories: critical, serious, major, and minor to be given the weight of the assessment. The weights of each clause will be summed up to determine the rating of processed food production facilities within indicators A, B, C, and D. Microbiological analysis of the product used the MPN method with two stages, namely the presumtive and confirmative test. The positive index results of the MPN test were compared with the MPN table to determine the amount of coliform contamination. The results of the CPPOB gap analysis in the UMKM "PT" received a D rating (very poor) with 10 minor discrepancies, 23 major, and 2 critical. after corrective action PT UMKM gets a B grade. UMKM "PT" can apply for IPCPPOB through the OSS website and e-certification. The coliform test results were <3.0 MPN/ml for fruit drink samples using refill gallon water source, and 3.6 MPN/ml for fruit drink using water source from PDAM.
