Abstract

RINGKASAN Tomat (Solanum lycopersicum) merupakan komoditas buah-buahan yang banyak manfaatnya. Buah ini termasuk buah klimaterik, dimana akan terus terjadi proses pematangan setelah panen. Banyaknya jumlah panen tomat pada tahun 2017-2021 menyebabkan sulitnya pengendalian umur dalam tomat sendiri. Penelitian ini dilakukan dengan tujuan untuk menganalisa sifat fisiko kimia tomat (susut bobot, visual, kekerasan, total padatan terlarut, total asam, kadar likopen, dan kadar vitamin C) yang telah diberi pre-treatment sinar UV serta menganalisa dosis penyinaran yang optimal terhadap umur simpan tomat. Pada penelitian ini digunakan tomat dengan varietas Chicago yang ditanam di daerah Pakisaji, Kabupaten Malang dan diambil dengan ukuran dan tingkat kematangan yang sama yaitu pada stage light red. Pre-treatment dengan sinar UVA dilakukan pada intensitas rendah (0,824 W/m2) serta intensitas tinggi (93,46 W/m2) dengan pengaturan dosis sebesar 0,97 kJ/m2 dan 3,7 kJ/m2. Menurut penelitian terdahulu, penyinaran buah tomat menggunakan UVC dengan dosis tersebut dapat memberi pengaruh nyata terhadap fisiko kimia (susut bobot, kekerasan, total padatan terlarut, total asam, kadar likopen, dan kadar vitamin C) buah tomat. Pada penelitian ini, buah tomat yang telah diberi perlakuan pre-treatment sinar UV maupun buah tomat tanpa perlakuan (kontrol) disimpan dalam suhu ruang (28oC) serta kondisi headspace diasumsikan sama. Analisa fisiko kimia tomat dilakukan selama 13 hari dan diamati pada hari ke-1, hari ke-5, hari ke-9, dan hari ke-13. Berdasarkan hasil analisa yang telah didapatkan, pre-treatment dengan sinar UVA tidak memberikan pengaruh nyata terhadap sifat fisiko kimia dari tomat dam umur simpannya. Oleh karena itu, perlu ditinjau kembali dosis yang tepat dengan menggunakan sinar UVA untuk mendapatkan pengaruh yang nyata pada sifat fisiko kimia dari tomat, serta mengontrol keadaan kemasan dari buah tomat.

English Abstract

SUMMARY Tomato (Solanum lycopersicum) is a fruit commodity that has many benefits. This fruit is a climateric fruit, where there will continue to be a ripening process after harvest. The large number of tomato harvests in 2017-2021 makes it difficult to control the lifespan in tomatoes themselves. This study was conducted with the aim of analyzing the physico-chemical properties of tomatoes (weight loss, visual, hardness, total dissolved solids, total acid, lycopene levels, and vitamin C levels) that have been given UV light pre-treatment and analyzing the optimal irradiation dose for the shelf life of tomatoes. In this study, tomatoes with Chicago varieties were used which were grown in the Pakisaji area, Malang Regency and taken with the same size and maturity level, namely at the light red stage. Pre-treatment with UVA light was carried out at low intensity (0.824 W/m2) and high intensity (93.46 W/m2) with dose settings of 0.97 kJ/m2 and 3.7 kJ/m2. According to previous research, the use of these doses in UVC light can have a significant effect on several physicochemical properties (weight loss, hardness, total soluble solids, total acid, lycopene levels, and vitamin C levels) of tomatoes. In this study, tomatoes that had been given UV light pre-treatment and tomatoes without treatment (control) were stored at room temperature (28oC) and headspace conditions were assumed to be the same. Physicochemical analysis of tomatoes was carried out for 13 days and observed on day 1, day 5, day 9, and day 13. Based on the results of the analysis that has been obtained, pre-treatment with UVA light does not have a real effect on the physico-chemical properties of tomatoes and their shelf life. Therefore, it is necessary to review the appropriate dosage using UVA light to get a noticeable influence on the physico-chemical properties of tomatoes, as well as control the state of packaging of tomatoes.
