Abstract

Pengembangan agroindustri di Kota Batu berkembang pesat didukung dengan melimpahnya tanaman hortikultura. Tingkat produktivitas dan keanekaragaman hortikultura yang tinggi menunjang UKM dalam menghasilkan produk dengan macam variasi. Keripik buah merupakan salah satu makanan ringan berbasis hortikultura yang diminati oleh konsumen dari segi rasa, tekstur, serta kemudahannya dalam penyimpanan dan transportasi. Salah satu UKM produksi keripik buah adalah UKM Ramayana Agro Mandiri di Kota Batu. UKM masih menggunakan teknologi vacuum fryer dalam produksi keripik buah yang memicu dua permasalahan utama yakni tingginya biaya operasional dan tingginya kandungan minyak pada keripik buah. Pada tahun 2022, harga minyak mampu mencapai Rp. 19.000 - 20.000/liter. Penggunaan minyak juga menyebabkan kandungan lemak keripik apel yang dipasarkan mencapai 33,6%. Dengan demikian diperlukan alih teknologi bagi UKM sehingga mampu menghasilkan produk olahan buah lebih sehat dan bernilai jual tinggi. Freeze dryer adalah teknologi sublimasi yang dilakukan dengan suhu rendah dan tekanan vakum. Teknologi ini dapat mempertahankan karakteristik nutrisi, mikrobiologi dan sensorik dari produk yang dikeringkan. Pengadaan teknologi freeze dryer memerlukan analisis kelayakan untuk membantu pelaku usaha dalam mengambil langkah strategis sebelum melakukan implementasi. Analisis kelayakan merupakan kegiatan untuk menilai kelayakan dari usaha yang akan dibangun dan menganalisis potensi keberlangsungan usaha. Sehingga penelitian ini bertujuan untuk menganalisis kelayakan teknis dan finansial teknologi vacuum fryer dan freeze dryer untuk produksi keripik buah. Penelitian akan dilaksanakan di UKM Ramayana Agro Mandiri pada bulan September 2022 - Maret 2023. Analisis kelayakan teknis mampu memberikan informasi kelayakan sebuah pemilihan teknologi. Pada penelitian ini analisis data aspek teknis dilakukan dengan menilai utilitas mesin dan kualitas produk dengan Uji Organoleptik. Analisis kelayakan finansial merupakan metode matematis untuk mengetahui kondisi kelayakan dari segi finansial, dengan demikian dapat diketahui tingkat keuntungan dari suatu investasi. Pada penelitian ini analisis data aspek finansial dilakukan dengan metode NPV, IRR, B/C Ratio, BEP, dan Payback Period Hasil analisis teknis utilitas vacuum fryer dan freeze dryer dikatakan layak namun biaya utilitas freeze dryer lebih tinggi. Hasil uji organoleptik produk vacuum fryer dan freeze dryer menunjukkan nilai 3,5 dan 3,7 (cukup suka) sehingga layak. Hasil analisis finansial vacuum fryer dikatakan layak dengan HPP Rp. 10.220, mark up 27,20%, NPV Rp. 486.041.310,- > 0, IRR 36,5% > 12%, PP 3,8 tahun < 5 tahun, Net B/C Ratio 2,1 > 1, dan BEP (Q) dan BEP (P) sebesar 24.510 unit; Rp. 318.624.702. Hasil analisis finansial freeze dryer dikatakan layak dengan HPP Rp. 12.569, mark up 98,90%, NPV Rp. 2.083.913.154,- > 0, IRR 47% > 12%, PP 2,4 tahun < 5 tahun, Net B/C Ratio 2,34 > 1, dan BEP (Q) dan BEP (P) sebesar 13.207; Rp. 330.170.541. Hasil sensitivitas menunjukan produk vacuum fryer sensitif terhadap perubahan harga apel 10% - 50% dan menjadi tidak layak pada kenaikkan 30%. Hasil sensitivitas menunjukan produk freeze dryer tidak sensitif terhadap perubahan harga apel 10% - 50% sehingga tetap layak.

English Abstract

The development of agro-industry in Batu City is growing rapidly supported by an abundance of horticultural crops. High levels of productivity and horticultural diversity support SMEs in producing products with a wide variety. Fruit chips are one of the horticulture-based snacks that are in demand by consumers in terms of taste, texture, and ease of storage and transportation. One of the SMEs producing fruit chips is SMEs Ramayana Agro Mandiri in Batu City. SMEs still use Vacuum Fryer technology in the production of fruit chips which triggers two main problems, namely high operational costs and high oil content in fruit chips. In 2022, oil prices can reach Rp. 19,000 - 20,000/liter. The use of oil also causes the fat content of marketed apple chips to reach 33.6%. Thus, technology transfer is needed for SMEs so that they can produce processed fruit products that are healthier and have high selling value. Freeze Dryer is a sublimation technology that is carried out at low temperatures and vacuum pressure. This technology can maintain the nutritional, microbiological, and sensory characteristics of the dried product. Procurement of Freeze Dryer technology requires a feasibility analysis to assist business actors in taking strategic steps before implementation. Feasibility analysis is an activity to assess the feasibility of the business to be built and analyze the potential for business continuity. So this study aims to analyze the technical and financial feasibility of Vacuum Fryers and freeze-dryer technology for the production of fruit chips. The research will be carried out at SMEs Ramayana Agro Mandiri from September 2022 - March 2023. Technical feasibility analysis can provide information on the feasibility of a technology selection. In this study, technical aspect data analysis was carried out by assessing machine utility and product quality with organoleptic tests. Financial feasibility analysis is a mathematical method to find out the conditions of feasibility from a financial point of view, thereby knowing the level of profit from an investment. In this study, financial aspect data analysis was carried out using the NPV, IRR, B/C Ratio, BEP, and Payback Period methods. The results of the technical analysis of the Vacuum Fryer and Freeze Dryer utilities are said to be feasible but the cost of the Freeze Dryer utility is higher. The organoleptic test results for the Vacuum Fryer and Freeze Dryer products showed values of 3.5 and 3.7 (like enough) so they were feasible. The results of the financial analysis of the Vacuum Fryer are said to be feasible with the HPP Rp. 10,220, mark up 27.20%, NPV Rp. 486,041,310 > 0, IRR 36.5% > 12%, PP 3.8 years < 5 years, Net B/C Ratio 2.1 > 1, and BEP (Q) and BEP (P) of 24,510 units; Rp. 318,624,702. The results of the Freeze Dryer's financial analysis are said to be feasible with the HPP Rp. 12,569, 98.90% markup, NPV Rp. 2,083,913,154 > 0, IRR 47% > 12%, PP 2.4 years < 5 years, Net B/C Ratio 2.34 > 1, and BEP (Q) and BEP (P) of 13,207; Rp. 330,170,541. The sensitivity results show that the Vacuum Fryer product is sensitive to changes in the price of apples by 10% - 50% and becomes unfit for a 30% increase. The sensitivity results show that freeze-dryer products are not sensitive to changes in the price of apples 10% - 50%, so they are still feasible.
