Abstract

Produksi kentang pada tahun 2021 mengalami kenaikan dari tahun sebelumnya sebesar 6,1%. Produksi kentang pada tahun 2021 mencapai angka 1,36 juta ton sedangkan pada tahun 2020 mencapai angka 1,28 juta ton. UKM Agronas Gizi Food memproduksi keripik kentang yang berbeda dengan produk lain yaitu tanpa pengawet. Jumlah pengiriman bahan baku yang selalu konstan mengakibatkan UKM Agronas Gizi Food belum bisa melakukan ekspansi produk sehingga permintaan pasar yang tinggi belum terpenuhi. Dalam mengelola proses pengolahan kentang tersebut, diperlukan sistem rantai pasok yang mampu menangani aliran bahan baku sampai produk ke tangan konsumen. Penelitian ini bertujuan untuk membantu UKM Agronas Gizi Food dalam mengetahui aliran rantai pasok yang dijalankan bersama mitra produksinya. Penelitian ini juga dapat mengidentifikasi kekurangan praktik serta upaya perbaikannya. Pengukuran kinerja rantai pasok dilakukan dengan aplikasi Analytical Network Process (ANP)- Objective Matrix (OMAX) menggunakan perspektif Supply Chain Operation Reference (SCOR). SCOR merupakan metode yang digunakan sebagai alat untuk mengkomunikasikan pada pihak-pihak yang terlibat di dalam rantai pasok perusahaan kemudian dilakukan pembobotan Key Performance Indicator (KPI) dengan menggunakan ANP. Perhitungan OMAX menghasilkan indikator dengan kategori warna yang menunjukkan perlunya perbaikan rantai pasok UKM Agronas Gizi Food dengan didasari bobot KPI yang diperoleh dari metode ANP. Output yang diharapkan dari penelitian ini adalah perbaikan dari praktik yang dapat meningkatkan kinerja rantai pasok UKM Agronas Gizi Food dengan mitranya. Berdasarkan hasil perhitungan performansi menggunakan OMAX, terdapat 10 KPI dari 21 KPI yang disediakan memiliki nilai rata-rata dengan kategori kuning. KPI tersebut diantaranya 1 KPI dimensi plan, 3 KPI dimensi source, 3 KPI dimensi make, 2 KPI dimensi deliver, dan 1 KPI dimensi return. Hal tersebut menunjukkan bahwa kinerja masih belum mencapai target yang diinginkan sehingga perlu adanya perbaikan kinerja rantai pasok. Rekomendasi perbaikan yang diberikan untuk perusahaan diantaranya pembetukan departemen PPIC, komunikasi dan kerjasama yang baik antar pemegang rantai pasok, estimasi penjadwalan rantai pasok, analisis biaya produksi, pengelolaan tata cahaya bagian produksi, pemetaan rute kembali, dan analisis faktor penghambat

English Abstract

Potato production in 2021 has increased from the previous year by 6.1%. Potato production in 2021 will reach 1.36 million tons while in 2020 it will reach 1.28 million tons. UKM Agronas Gizi Food produces potato chips which are different from other products, namely without preservatives. The constant amount of raw material shipments has resulted in the UKM Agronas Gizi Food not being able to expand their products so that the high market demand has not been fulfilled. In managing the potato processing process, a supply chain system is needed that is able to handle the flow of raw materials to the product into the hands of consumers. This study aims to help UKM Agronas Gizi Food in knowing the flow of the supply chain that is run with its production partners. This research can also identify practice deficiencies and efforts to improve them. Supply chain performance measurement is carried out using the Analytical Network Process (ANP)- Objective Matrix (OMAX) application using the Supply Chain Operation Reference (SCOR) perspective. SCOR is a method that is used as a tool to communicate to the parties involved in the company's supply chain and then Key Performance Indicator (KPI) is weighted using ANP. OMAX calculations produce indicators with color categories indicating the need for improvement in the UKM Agronas Gizi Food supply chain based on the KPI weights obtained from the ANP method. The expected output of this research is the improvement of practices that can improve the performance of the UKM Agronas Gizi Food supply chain with its partners. Based on the results of performance calculations using OMAX, there are 10 KPIs out of the 21 KPIs provided that have an average value in the yellow category. These KPIs include 1 KPI for the plan dimension, 3 KPIs for the source dimension, 3 KPIs for the make dimension, 2 KPIs for the deliver dimension, and 1 KPI for the return dimension. This shows that performance has not yet reached the desired target, so it is necessary to improve supply chain performance. Recommendations for improvements given to companies include establishing a PPIC department, good communication and cooperation between supply chain stakeholders, estimating supply chain scheduling, production cost analysis, production department lighting management, return route mapping, and inhibiting factor analysis.
