Abstract

Tanaman cincau hitam atau Mesona palustris BL merupakan salah satu komoditas pertanian yang pemanfaatannya digunakan sebagai olahan bahan pangan. Tanaman cincau hitam tumbuh sangat subur saat musim hujan, setelah dipanen tanaman ini tidak dapat bertahan lama atau cepat membusuk karena memiliki kandungan air cukup tinggi. Oleh karena itu diperlukan penanganan pascapanen yang tepat seperti pengeringan. Penelitian ini dilakukan bertujuan untuk mengetahui sifat fisik simplisia daun cincau hitam yang meliputi kadar air, rendemen, shrinkage dan warna serta mengetahui kinetika model pengeringan yang sesuai dengan karakteristik daun cincau hitam. Dalam penelitian ini menggunakan alat pengering mekanis tipe rak, sehingga proses pengeringan tidak tergantung pada kondisi cuaca. Penelitian dilakukan pada level suhu pengeringan 40 ± 3 °C, 50 ± 3 °C, 60 ± 3 °C menggunakan Rancangan Acak Lengkap (RAL). Analisis data menggunakan One Way ANOVA dengan taraf kepercayaan 5%, jika terdapat beda nyata akan dilanjutkan dengan uji Duncan. Berdasarkan uji ANOVA, suhu pengeringan berpengaruh signifikan terhadap kadar air, rendemen, dan warna. Hasil penelitian memperoleh kadar air dalam rentang nilai 1.28%bb – 6.54%bb. Nilai laju pengeringan tertinggi sebesar 0.276%bb/menit hingga 1.005%bb/menit. Nilai rendemen terendah pada suhu 60 ± 3 °C yaitu 14.105% dan tertinggi pada suhu 40 ± 3 °C sebesar 17.807%. Nilai shrinkage pengeringan yaitu 2.734 ± 0.073% - 4.548 ± 1.617%. Analisis warna L*, A*, B* menggunakan color reader menghasilkan nilai secara berturut-turut sebesar 43.86 – 51.27; 5.59 – (-1.99); 33.38 – 40.10. Model pengeringan terbaik untuk menggambarkan karakteristik pengeringan daun cincau hitam adalah Model Page dengan nilai R (Koefisien determinasi) antara 0.99595 – 0.99909, nilai RMSE (Root Mean Square Error) antara 0.00016-0.00004, nilai X 2 (Chi-square) antara 0.00059 – 0.00008.

English Abstract

Black glass jelly plant or Mesona palustris BL is one of the agricultural commodities used as processed food. The black grass jelly plant can grows very well during the rainy season, after being harvested this plant can’t last long or rot quickly because it has a high enough water content. Thefefore, in this case required drying process as postharvest handling. The aim of this research was to determine the physical properties of the black grass jelly leaf simpicia including water content, yield, shrinkage and color as well as to know the kinetics of the drying model according to the characteristics of black grass jelly leaves. In this research using tray dryer as a mechanical dryer, so that the drying process doesn’t depend on weather conditions. The research wa conducted at a levels temperatur of 40 ± 3 °C, 50 ± 3 °C, 60 ± 3 °C using CRD (Complete Randomized Design). Data analysis used One Way ANOVA with a confidence level of 5%, if there is a significant difference it is continued with Duncan’s test. Based on the ANOVA test, drying temperatur has a significant effect on moisture content, yield, and color. The result of the research obtained the water conten in the value range of 1.28%bb – 6.54%bb. The highest drying rate is 0.276%bb/minute to 1.005%bb/minute. The lowest yield value at 60 ± 3 °C is 14.105% and the highest at 40 ± 3 °C is 17.807%. The shrinkage value is 2.734 ± 0.073% - 4.548 ± 1.617%. The result values in continued of L*, a*, b* color analysis using a color reader is 43.86 – 51.27; 5.59 – (-1.99); 33.38 - 40.10. The best drying model to describe the drying characteristics of black grass jelly leaves is the Page Model with R 2 values (coefficient of determination) between 0.99595 to 0.99909, RMSE (Root Mean Square Error) values between 0.00016 to 0.00004, and X 2 values (Chi-square) between 0.00059 to 0.00008.
