Abstract

Kopi Liberika merupakan spesies kopi yang dibudidayakan di Indonesia dengan Banyuwangi menjadi salah satu area produksinya. Penelitian dan publikasi terkait kopi Liberika di Indonesia masih terbatas meskipun memiliki berbagai potensi dan manfaat. Variasi kualitas kopi dapat dipengaruhi oleh berbagai faktor dari lahan hingga pengolahan dan penyajian. Penelitian ini melakukan eksplorasi enam kebun di Banyuwangi dan karakterisasi kopi sangrai Liberika yang dihasilkan. Tujuan penelitian ini adalah untuk mengetahui pengaruh perbedaan kebun terhadap karakteristik kimia dan fisik kopi sangrai Liberika, serta mengevaluasi adanya pengelompokan dan hubungan antara faktor lahan (unsur hara tanah) kebun dengan karakteristik kimia dan fisik kopi Liberika yang dihasilkan. Penelitian dilakukan dengan menggunakan Rancangan Percobaan Acak Lengkap (RAL) dengan enam sampel dari enam kebun berbeda (K1, K2, K3, K4, K5, K6). Setiap percobaan diulang sebanyak tiga kali ulangan. Persiapan bahan dibagi ke dalam dua tahap yakni proses pembuatan kopi sangrai dan proses ekstraksi kopi sangrai bubuk. Data hasil penelitian dianalisis dengan menggunakan metode Analysis of Variance (ANOVA) selang kepercayaan 95% dan dilanjutkan dengan uji Tukey apabila ditemukan perbedaan nyata. Korelasi antara kebun dengan karakteristik biji kopi sangrai dilakukan dengan Analisis Multivariat dengan metode Personal Component Analysis (PCA). Kondisi kebun berpengaruh nyata terhadap terhadap kadar abu, kadar protein, kadar lemak, dah pH kopi sangrai. Korelasi positif ditemukan antara kadar abu dan pH kopi sangrai. Korelasi negatif dapat dilihat pada hubungan antara pH KCl dan kadar lemak kopi, C-organik dan kadar kafein kopi, P-tersedia dan pH kopi, serta kadar kafein dengan pH kopi sangrai.

English Abstract

Liberica coffee is a coffee species cultivated in Banyuwangi, Indonesia. There is lack of research and publication regarding this coffee despite its various benefits. Quality of this coffee bean influenced by a lot of factors from the field up to serving. This research carried out to explore six fields of Liberica coffee in Banyuwangi and characterise the roasted coffee beans. The purpose of this research are to find the effect of different field to chemical and physical characteristics of Liberica roasted coffee bean and evaluate if there is any grouping or relation between field factors (soil nutrients) with chemical and physical characteristics of Liberika roasted coffee beans. This experiment was conducted using a Completely Randomized Design (CRD) with six samples of roasted coffee beans from different fields (K1, K2, K3, K4, K5, K6). Each experiment was carried out in three repetitions. The preparation of samples is separated into two steps; roasting green coffee beans and extracting roasted coffee beans. The test results will be analyzed using Analysis of Variance (ANOVA) at a 95% confidence level, which Fisher or Tukey will apply as further tests. Multivariate analysis, PCA (Personal Component Analysis), will be conducted to see any correlation between parameters. Results show that roasted coffee beans' characteristics; ash content, fat content, protein content, and pH value are significantly affected by different fields. There is a positive correlation between ash content and coffee acidity (pH value). Meanwhile, a negative correlation was discovered in soil acidity (pH KCl) and fat content, organic carbon and caffeine content, P-limitation and coffee acidity (pH value), as well as caffeine content and coffee acidity (pH value).
