Abstract

Tahu merupakan produk olahan pangan non fermentasi kedelai yang berbentuk padat dan bertekstur lunak. Pembuatan tahu dilakukan dengan cara menggumpalkan ekstrak protein kedelai. Seiring berjalannya waktu, banyak dikembangkan inovasi produk makanan yang lebih ekonomis dengan bahan baku utama berupa tahu, salah satunya yaitu stik tahu. Stik tahu merupakan makanan ringan yang memiliki bentuk pipih memanjang, tekstur kering dan renyah, serta rasa yang gurih. Stik tahu biasanya dijadikan sebagai cemilan ringan, lauk pauk, maupun oleh-oleh khas Kota Kediri. Salah satu UKM yang memproduksi stik tahu adalah UD Sidodadi. UD Sidodadi selalu mengupayakan aktivitas rantai pasoknya agar dapat berjalan dengan baik. Namun, masih terdapat kemungkinan munculnya beberapa risiko pada aktivitas rantai pasok dimana risiko-risiko tersebut dapat mengganggu keseluruhan kegiatan perusahaan. Terdapat 2 level risiko yang harus dihadapi oleh UD Sidodadi yaitu level tengkulak kedelai lokal dan UD Sidodadi.

English Abstract

Tofu is a non-fermented soybean food product that is solid in shape and has a soft texture. Tofu is made by coagulating soy protein extract. Along with time, many food product innovations have been developed that are more economical by using tofu as the main raw material, one of which is tofu stick. Tofu stick is snack that have an elongated flat shape, a dry and crunchy texture, and a savory taste. Tofu stick is usually used as a light snack, side dishes, or special souvenirs of the City of Kediri. One of the UKM that produces tofu stick is UD Sidodadi. UD Sidodadi always strives for its supply chain activities to run well. However, there is still the possibility of the emergence of several risks in supply chain activities where these risks can disrupt the overall activities of the company. There are 2 levels of risks that must be faced by UD Sidodadi, namely the supplier and manufacturing levels.
