Abstract
Tanaman meniran merupakan tanaman liar yang biasa dimanfaatkan sebagai obat herbal. Meniran mengandung beberapa senyawa kimia yang terdiri dari saponin, flavonoid, polifenol, phyllanthin dan hypophyllantin. Pemanfaatan ekstrak meniran dapat bersifat imunomodulator atau mampu merangsang sistem kekebalan tubuh sehingga dapat melindungi dari serangan radikal bebas. Whey Protein Isolate (WPI) mempunyai peran sebagai gelling agent, emulsifier, pembuat busa dan sumber protein. Hidrolisat kasein berperan sebagai enkapsulan yang melindungi partikel dari kerusakan selama proses pemanasan dan meningkatkan sumber protein. Interaksi protein dan senyawa fenolik mengakibatkan terjadinya modifikasi sifat fungsional protein dan fenolik. Interaksi ini dapat mengakibatkan perubahan kelarutan protein, stabilitas termal, daya cerna, aktivitas antioksidan, sifat pembusaan dan pengemulsi. Kombinasi penggunaan bahan berupa whey protein. Ekstrak meniran dan hidrolisat kasein dapat difortifikasi pada susu skim bubuk dengan sifat fisik yang baik. Banyak produk susu berbentuk bubuk yang dikemas menggunakan kemasan plastik. aluminium foil dan kaleng sehingga akan meningkatkan kemasan non biodegradable yang dapat mencemari lingkungan, sehingga kemasan tersebut perlu diganti dengan menggunakan Edible Film sebagai solusi kemasan yang praktis dan biodegradable serta baik bagi lingkungan. Edible film yang digunakan berbahan dasar glukomanan dan gelatin. Glukomanan mempunyai sifat yang istimewa antara lain mampu membentuk larutan kental dalam air, mampu mengembang dengan kekuatan yang besar, mampu membentuk gel dan lapisan tipis. Gelatin mempunyai beberapa keunggulan seperti biokompatibilitas yang tinggi, kemampuan pembentukan film yang baik dan kemampuan terurai secara hayati. Kombinasi penggunaan glukomanan dan gelatin dapat meningkatkan ikatan silang film polimer dengan membentuk ikatan hidrogen sehingga diharapkan mempunyai sifat fisik yang baik, antara lain mudah ditutup dan larut.
English Abstract
The purpose of this research obtained the powdered skim milk fortified with whey protein and meniran extract encapsulated casein hydrolyzate with the best physical properties packaged using fast sealing dissolving edible film with the best physical characteristics. The research method used the experimental method with the calculation used Completely Randomized Design (CRD) with 5 treatments and 3 replications. Details of the treatments used casein hydrolyzate in Stage I consisted of T0 (0%), T1 (2%), T2 (4%), T3 (6%) and T4 (8%). The variables analysis consisted of functional group, particle size, particle microstructure and optical microscopy. The results of powdered skim milk fortified meniran with the best physical properties used 4% concentration with detailed FTIR analysis results had a wave number of 3251.98 cm-1 and found phyllanthin compounds and amide groups, particle size of 173.33 nm, microstructure particle produce medium agglomerates, distributed spread evenly, good enough uniformly formed of agglomerates, slightly rough-wrinkled textured and optical microscopy produces stable bubbles, uniform size of bubbles, spacing between bubbles is not hollow, distributed spread evenly because the surface is not large and not easily broken the bubbles. Powdered skim milk fortified meniran used 4% concentration of casein hydrolyzate then packaged using fast sealing dissolving edible film. Details of the treatments used gelatin in Stage II consisted of T1 (0.5%), T2 (0.625%), T3 (0.75%), T4 (0.875%) and T5 (1%). The variables analysis consisted of water activity (Aw), sedimentation, total of solubility, color, color spectrum and physical properties. The results of edible film with the best physical characteristic used 0.5% concentration with detailed of water activity (Aw) analysis of 0.96, sedimentation of 0.012 g, total of solubility of 1.31 ml, L* color of 70.29, a* color of -3.08, b* color of 5.20, chroma of 6.04, hue angle of 46.50o with reddish yellow color and the physical properties that successfully dissolve powdered skim milk fortified meniran packed used fast sealing dissolving edible film during 2 minutes in 60oC water, only leaving the seal portion above that undissolved.
